Today we’d like to introduce you to Clifton Gillock.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
We started by experimenting making pops at home and freezing them in our own freezers. I was living in Austin, TX at the time but my partner who happens to be my aunt & best friend would make dozens of different flavors and invite all of her friends and family over for “tasting parties.” It took us a while to make the decision not only on a name but also to pursue KICPOPS as a serious business venture. We then slowly started operating out of a small shared commercial kitchen space and quickly realized that we would outgrow the space within our first year.
At first, I would roll a cart out anywhere I thought I could sell some pops most of the time on a corner in the streets of downtown. After a few months, we had become involved with a number of farmers markets gained more experience booking events and a ton of confidence surrounding our product. We only use fresh fruits and herbs (sometimes vegetables) and immediately consumers noticed a difference between our product and the competitions. We now have a team of 8 and have gone from 1 cart to 6 carts in a short amount of time. We have done everything from private catering events to being selected as 1/2 dessert vendors for Free Press Summer Fest and honored to participate in the Culturemap Tastemaker Awards.
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Our main struggle was kitchen space. We quickly outgrew our shared commercial kitchen space. The good news is we are in the process of building out our own offices and production facilities which we will begin to operate out of in 2018.

We are a 100% mobile artisan ice pop business. We specialize in private catering and large events/festivals. Being a small local manufacturer has its benefits we are able to provide our wholesale clients with a range of customization no one else can. We use 100% fresh ingredients and locally source everything when possible, we love partnering with other local companies to creating unique flavors such us our Coffee and Donuts we use Java Pura Coffee Roasters Coffee and The Doughmaker Htx Donuts!
