Today we’d like to introduce you to Charina Khammysouk.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
It all started in 2017 in our home in Cypress, TX, shortly after Hurrican Harvey. My husband (Chef P) asked me what I wanted to eat. I was craving for some Louisiana style cracklins and he mentioned to me that he use to help his grandma prep and cook cracklins. A short while later, I was eating the most delicious cracklins that I have ever had! This was not just any cracklin with the usual Cajun seasoning on it. This had a burst of Cajun and Asian spices that was a flavor unlike any other. Before we knew it, our friends and family were sending us pre-orders for Chef P’s Cajun-Asian Cracklins. That is how What’s Crackalackin began. Fast forward to 2019, we are currently selling our products at farmers markets, local events, through our webstore, and on Amazon.
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
As most people will tell you, it is not an easy road to become a small business owner. Being in business for yourself takes a lot of hard work, dedication, and self-motivation. The constant struggle that we encounter is scaling the business. We set goals and have been fortunate enough to be successful at attaining these goals, but as we continue to grow there are definitely roadblocks along the way. My favorite part of these challenges is being able to find alternative solutions.
Another struggle that we face is dealing with Mother Nature. Being vendors at farmers markets or any outdoor event, we are constantly competing with the weather. Whether it be rain, heat, cold or wind, we endure it all just to be able to get our products to our customers. We are thankful for those that come out to support us even when it is an umbrella and rainboots kind of day.

We are a husband and wife duo that built our small business with the support from our family, friends, and community. Without them, What’s Crackalackin would not exist, so we would like to say THANK YOU! We are located in the city of Cypress, TX. For those who never heard of the town before, it is nearby Houston. Growing up as Houstonians, we have been fortunate enough to be surrounded by so many cultures. You can taste food from all around the world without ever having to get on a plane. That is the inspiration behind our Cajun-Asian seasoning, our hometown Houston. It is a melting pot of flavors that you can only find here!
What were you like growing up?
Chef P and I both grew up around excellent home chefs, especially our grandmothers. They have definitely inspired us and taught us the importance of learning how to cook. He first learned how to cook pork rinds and cracklins from his grandmother as a young man. That is when his passion for cooking grew and he continues to perfect his culinary skills every day.
Our mission is to grow our snack company and to get as many people across the U.S.A. to taste our unique flavors. We also love venturing out around h-town and trying out new restaurants and establishments. Becoming small business owners has really taught us how important it is to support other locals, especially vendors at farmers markets.
