

Today we’d like to introduce you to Marco Polo Ramirez.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
I’ve been a dancer, musician, Dj and firefighter but this time we’ll talk about food. I love food & Houston is very multicultural with many delicious places to eat before I opened myself to exploring the foods of Houston. I was battling depression and the only thing that helped me get by was djing & stress eating. Once I beat my depression, I was stuck on eating foods that made me feel better, so with that being said I put together all the things I like all at once and created the Fajita Hot Dog in late 2012. Now I watch many people come to my food truck with smiles on their face, I don’t know what they are going thru that day but I know when my food is in their hands they are happy and distracted from the rest of the world, it’s beautiful & amazing to watch. For a short moment, they decided to celebrate life at Los Primos Fajita Hot Dogs.
Has it been a smooth road?
Everything was running smooth, I was a filter press Operator & Emergency Response Team Member for a refinery called Clean Harbors for seven years. I was working at the Plant, running the truck when I got out and also Volunteering for the Deer Park Fire Department. All that finally bit me in the ass when I pointed out at work. Pointing out is when your call off work, show up late or leave early, you accumulate points and get terminated at 27 points. It was my only offense in seven years, we were union so I decided to close the truck down and focus on working at the plant because my daughter had just been born but it was too late I pointed out. Being union we tried fighting for my job back, there’s people there that got their job back for doing way worse so I thought we had a good chance. I straightened up and gave them tears for my job back but I was denied because they said I was Djn and operating a food truck, it would be too distracting. It was a dagger to the heart, especially when a guy before me got his job back for abandoning a live unit. I was on top of the world and how quickly I ended up at the bottom, I had no choice but to grind my ass off and make this food truck work and the hard work paid off. There is no smooth road, hard, passionate & dedicated work makes it happen.
So let’s switch gears a bit and go into the Los Primos Fajita Hot Dogs story. Tell us more about the business.
I created the Fajita Hot Dog & partnered with my cousin Diego Olivarez to open Los Primos Fajita Hot Dogs food truck. It’s a kings Hawaiian hot dog bun with beef Fajita topped with chile con queso and salsa verde. We are proud of being the children of immigrants that came to America for a better life, not only did we get a better life but we did our part to make our community and city better. We made our people proud.
How do you think the industry will change over the next decade?
I see the food truck industry growing for the next 3-5 years after that it’s going to get saturated and only the hard workers will survive, those who are passionate about their food and the business will strive. In basketball, they say “Ball Don’t Lie’ well neither does food if it’s good its good and it’ll last.
