

Today we’d like to introduce you to Dean Antie.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
My wife and I are from Louisiana where good food is a staple in every household. We have always enjoyed cooking and sharing our meals with friends and family. Along with that, I have worked in the meat industry for over 25 years and have learned to appreciate quality meat products. When we moved to Texas 10 years ago, we could not find any sausages we liked and decided to make our own. As we started this project, we thought there was a need in the area for good, quality meats, sausages, and good ole Louisiana specialties such as Corn and Shrimp Bisque, Red Beans and Sausage and Chicken and sausage Gumbo. We decided to open a store where we could bring a little Louisiana to Texas. Now we offer a deli menu that includes Muffalettas – a New Orleans specialty, some of the best shrimp and catfish po-boys around and boudin balls are quite popular. Along with boudin, we offer about 10 different sausages made right at the store. We also do wild game processing for all the hunters in the area. We strive for quality and an atmosphere where you come in and feel at home.
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Starting and owning your own business is never a smooth road. This is our first dive into this side of the business. One of the biggest struggles is getting the word out. We rely heavily on word of mouth and a lot of our customers come in saying they heard about us from a friend or co-worker. The other struggle is understanding the ups and downs of the business related to time of year. We find summertime to be a real struggle were the fall is extremely busy.

As a company we are a meat market offering quality meats – fresh cut steaks, specialty items, homemade sausages, gumbo, bisque, red beans, etc. We are a deli with a menu definitely influenced by our Louisiana roots and we offer wild game processing. As a company, we are extremely proud of our commitment to quality and providing an atmosphere that makes you feel good to be here. We get know our customers and appreciate each and every one and that sets us apart from most businesses today.
What were you like growing up?
My wife and I are both from Baton Rouge, Louisiana and are both from large families. We love LSU football and baseball. I am avid Saints fan. Growing up family was extremely important to us and we try and reflect that in our customer service. We see all of our customers as part of the family.
