Meet Alfred Maslowski of The Butcher’s Cut in Katy

Today we’d like to introduce you to Alfred Maslowski.

Alfred, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I got my start as a butcher at a top national, all-natural retailer. It was on that very meat block where the art of butchery stole my heart. I became obsessed and fell so in love with the craft. I just let myself go and completely immersed myself in it. I learned as much as I could every day, and over the years, strive to raise the bar and create new ideas for cuts and recipes.

Aside from butchering, I absolutely loved to cook! I was firing up my grill and smoker almost every night of the week. Basically, when I wasn’t at the butcher shop, I was experimenting with new cuts and creating fun, new recipes with wild game. I loved bringing home meat and pairing it with different rubs I’d find online and in stores. However, I came to a point where I had a hard time finding something without tons of artificial additives and sugars. That’s when I decided to start mixing my own blends together.

I began fiddling with different spices and ratios. Eventually, over the years, I came up with two different recipes that became my go-to blends for absolutely everything. They are now famously known as Texas Dirt and Butcher’s Blend.

My family and friends became curious about these rubs I was making, and so I’d give them little sample jars to try out at home. The response was insane! Pretty soon, I was getting phone calls from people wanting to try the rubs out, and others looking for refills.

I knew right then and there that I had something special. I realized that I was not alone in my quest for the perfect meat rub. It was at that moment, The Butcher’s Cut was born.

Has it been a smooth road?
This is my first venture into running a small business and so far, it’s been a very exciting and positive experience! I will say the biggest challenge is time management. I work a full-time job on top of trying to get the business off the ground which can be overwhelming at times. We don’t have any employees at the moment so I’m a one-man show! I do everything from website design to marketing, accounting, sales, you name it! I love the challenge though and I’m just taking everything one day at a time while trying to enjoy the journey as much as I can. I find what helps me the most with managing my time is prioritizing everything into to-do lists and setting daily goals.

Let’s touch on your thoughts about our city – what do you like the most and least?
Katy has been my home for the past nine years and there’s no other place I’d rather be. I love being outside the big city in the suburbs where I could drive down the road and still be surrounded by agriculture and open land. As a diehard meat lover, I love the reputation Katy is getting as of late for being a BBQ hot spot!

It’s hard to say what I like least about a city that’s been so good to me and that I’m so fortunate to be in. If there’s one thing, it’s that I’d like to see is more local meat being produced and sold here. Not just in Katy, but in all of Houston, there’s not a single whole animal butcher shop selling grass-fed, locally produced meat. Hopefully, that’ll change and who knows, maybe that’s what The Butcher’s Cut is destined to evolve into!
