Meet Adam and Wanalee Gorelick of Noe’s Crepe Coffee & Tea in Magnolia

Today we’d like to introduce you to Adam and Wanalee Gorelick.

Noe’s was started when Wanalee was deciding what she really wanted to do make a living in her life. She was recently in nursing school and found out that nursing is not for her. After she withdrew, Adam and Wanalee were trying to figure out what did Wanalee want to do for a living? Her response, crepes. That was the start but conceptually, it was designed through our world travels. People may think of Paris as the home of the Crepe but there are other places throughout the world that have very popular variations such as Bangkok and Tokyo. With all their traveling, they brought back the ideas needed to start Noe’s Crepes Coffee and tea.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Every business starting out is like having a baby, you have sleepless nights, worry about the unknowns that can harm it. When you financially risk so much, you have to make sure your baby succeeds. Of course, a giant struggle along the way has been Covid-19. It was very worrying when the government is telling you have to shut down your business and you have no idea what is going to happen. With new rules being implemented weekly, it was like relaunching a new business with each new set of rules released. We worked hard to make sure we could keep our doors opened and our employees paid. We sold to-go boxes of thai food. We delivered, we did curbside we made sure we would be successful.

Alright – so let’s talk business. Tell us about Noe’s Crepe Coffee & Tea – what should we know?
There are two things we are proud of, the quality of coffee, and the fact we have no freezers in the restaurant. Since there is no freezer, we are constantly shopping for the freshest produce and ingredients to make sure our food is always fresh. We feel that there are many coffee shops in the woodlands and surrounding area but many of them are very lacking skills for their baristas. We extensively train ours to make sure everything meets SCA (specialty coffee of America) standards. This is the same body that judges the world barista championship and objectively, there is a right way and a wrong to make a latte. Also, if anyone ever wants to discuss coffee, cupping notes, origins, whether or not our coffee is free or direct trade, how its processed, or even just want to know who roasted our coffee and where it was roasted, we can answer those questions.

Is there a characteristic or quality that you feel is essential to success?
Having great food and drinks should already be expected from a restaurant. With that being said, what really sets Noe’s apart from others is our staff. To some, a cup of coffee is just that, a cup of coffee. What people will remember is how they were treated when they get it. We are always willing to go the extra mile to know our customers are happy. We try to get across that if they ever want to personally get in contact with us they can send us a message on Facebook and it will always be read and responded by either Adam or Wanalee.
