Today we’d like to introduce you to Johnny Wesley.
Johnny, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
I fell in love with food at an early age. My Grandmother was where I got my love of food from. Sadly she passed away right before I started middle school. That’s when is started reading all of her old cookbooks and learning how to cook for myself and my mama.
In 2000 I started working at a grocery store and had the opportunity to help out in the bakery one day. I instantly fell in love with baking and knew that’s what I wanted to do with my life. After high school, I moved to Austin and went to Texas culinary academy. I graduated in 2004 and moved back to Houston. I’ve had the opportunity to work with some of the best chefs in Houston. Now, after almost 18 years in the industry, I get to bring my own brand of ice cream and desserts to the local scene.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
I was very fortunate to have learned from some very talented chefs. I was able to hone my culinary skills early on. Unfortunately, I didn’t have the greatest business sense. I could make edible works of art all day. I never had to worry about finding a job. Its a totally different world when you don’t know anything about managing business finances, marketing yourself, turning talent into a thriving business.
Please tell us about HTX Nitro Creamery.
We specialize in ice cream and frozen desserts, all made with liquid nitrogen. We’re not just chefs, we’re entertainers and always like to put on a show. We like to think outside of the box. We’re not trying to reinvent the wheel. We’re just trying to put on some nice rims. Our whole concept is also inspired by steampunk. We wanted to build a concept that represented our progressive style. Steampunk was not only nod to where we’ve been but where we want to go.
If you had to go back in time and start over, would you have done anything differently?
I would have saved as much money as possible and invested more in myself.
