Today we’d like to introduce you to Ricky Chambers II.
Hi Ricky , can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
BreaknBred BBQ started in 2016, I was at a point in my life where I knew I needed a change but I didn’t know exactly what I wanted to do. I knew I always loved helping and making people happy and I loved to cook and I was trying to see how I could piece all that together. I use to throw dinner parties all the time, for this particular party I decide to barbeque and everyone loved the food they even said, “you could sell this, it’s the best I’ve had in Texas.”
So, I started doing research, learning the ins and outs of food management/preparation, and which different flavors worked the best with different kinds of meat. Once I felt ready I started selling plates to different businesses for lunch around Houston. After being noticed, plates turned into catering, catering turned into onsite cooking, sauces, body builders packs and meal prep. Before I knew it, a few restaurants, clubs and bars were reaching out for our services. After awhile I ended up becoming the head chef at The Church Without Walls here in Houston and I was able to incorporate my ideas and recipes to many different people. When the pandemic hit, it slowed everything down but people still remembered BreaknBred BBQ.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
I don’t think anything in life ever goes as smooth as we plan, but I learned that failure isn’t a bad thing it’s more of a learning experience. I always had faith in my food, it was the exposure part that gave me trouble. When we first started out I felt I had to make a name for my business, so a lot of times I undercut myself thinking it would give me the exposure BreaknBred needed. There were plenty of restaurants, clubs and bars that wanted our food, but didn’t want to pay for our worth just off the notion that we were new and no one had ever heard of us.
We’ve been impressed with BreaknBred BBQ, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
BreaknBred BBQ is one of the best places in Texas to eat barbeque. We specialize in a low and slow style of preparation where the meat is fall off the bone tender and the flavor is undeniable. We take pride in everything we prepare, one of the best meats we offer is our juicy and tender brisket. Our brisket is prepared with our own signature rub and cooked to perfection, with over 18 hours of smoke at about 225 degrees.
What sets all our food apart from anyone else’s is you can actually taste the flavor in every bite and it melts in your mouth, no one has meat like BreaknBred’s meats. Brand wise my goal was to bring friends and family back to the table and literally break bread together like family and friends are meant to enjoy a meal. Each and every time we provide services no matter what, that goal is achieved and people not only love the food but they love the fellowship that comes with it.

Have you learned any interesting or important lessons due to the Covid-19 Crisis?
What I’ve learned during this pandemic is no matter how prepared you think you are, there’s always room for more preparation and evolution. You never know what life can and will throw at you, so you have to keep thinking, keep coming up with new and innovative ideas and always remember, there are certain things in life that every person always needs and food is a major component.
