

Today we’d like to introduce you to Ed and Cindy Kleeman.
Ed and Cindy, can you briefly walk us through your story – how you started and how you got to where you are today.
We relocated to Texas from Lemont, IL 3 years ago to be closer to our sons, Kurt and Kyle; daughter-in-law, Elizabeth; and grandchildren, Carson and Cora. I wanted a hotdog and didn’t find a place to get one. So I started talking about starting up a food trailer with our family. I said let’s bring Authentic Chicago style hotdogs to Texas.
That is when our journey began. I then started to think of what I need to do. So I contacted Vienna in Chicago and found that they had a University so I flew to Chicago and took the course on how to prepare Authentic Chicago Hotdogs and food. I graduated from the University and came home and started designing my trailer. A lot of thought went into it.
I wanted to ensure I was only going to do this once so I had to make sure I had all the equipment I needed to be successful in getting the food out and cooking it properly. 6 months later, I was ready to open my food trailer. It was very exciting to be invited to Deacon Baldy’s for our grand opening on May 13, 2017. It was a success! We’re changing the taste buds of customers from Texas and Chicago natives are in awe.
We have a saying “With every bite you take, there’s a party going on!!!”.
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
No. Just knowing how much to prepare for each event and increasing our network for future events is a challenge! Getting to know how to operate the equipment and making sure that things will run smoothly. Every day we learn something new!

Bright Relish is a food trailer that travels throughout the Houston and surrounding areas. I am the main operator of the business, responsible for making sure I have all inventory and equipment ready to go. I have a Chef’s special called the “Fire Dog”. I specialize in making sure our food comes out hot and that every customer that comes to our window is happy with their order.
We’re excited to be able to bring Authentic Chicago hotdogs and food to Texas!
So, what’s next? Any big plans?
My future plans! Well, we’re considering another food trailer or brick & mortar location. I look forward to being very successful!
