Today we’d like to introduce you to Megan Sedano
Hi Megan, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
I’ve come across many baby pictures of myself on my birthday or one of my siblings’ birthdays. I couldn’t tell if I was happier that it was a birthday or that I had a cake in front of me. Apparently, even if it wasn’t my birthday , I was given my own cake too. It’s beyond fact that I’ve loved sweets since I was young. My mom would buy snack cakes for us as kids and I used to snag one right as she put them away. With five of us siblings in total, I didn’t want to miss out! I’ve never had a favorite dessert, because I like to be adventurous and try new flavors. Fun fact: My letterman in high school had the nickname “Baby D” after a character in a movie that was obsessed with Little Debbie treats. One thing my family was consistent about was the celebration of birthdays and achievements. I attribute this to my enthusiasm for celebrating small or big wins and milestones in my own, and other’s lives.
Around the age of fifteen, my older sister , Amber , began taking me out to different places that I had never been before. She would bake and cook with me at her house using books from her amazing cookbook collection. I cherish all of those moments , because I feel it was then I found my adoration for baking. From bowling balls and ducky cupcakes to baked Alaska, we made a lot of different desserts. On my eighteenth birthday, my parents gifted me my first kitchen aid and the ultimate Wilton decorating kit. Eventually I pushed myself to make my first character cake out of fondant. It took me FOREVER! I learned so much at that point that I didn’t want to let myself down and step away from baking. At the time I worked at a local fast food restaurant after school into the weekend. I made an order for a local event planner and got more traction specializing in cakes. I’ve had many hobbies and interests since then, but always gravitate back towards baking. It was at that point I decided to move in a professional direction. I got my food handlers certification and registered with the city for a dba soon after.
I was headed for college at Sam Houston State and was coming back home on the weekends to make cake orders. After a couple of years , I decided to move back home because I missed city life. I enrolled at the University of Houston Downtown and completed my Bachelor’s degree in Business Administration. My background is in commercial retail operations. Along with my degree this taught me about all I know about business operations. My current focus is research and development. I enjoy creating new flavor combinations , unique items and creating what people want. When I travel, I research the best restaurants and bakeries to visit to learn as much as I can about the culture and food scene of the city.
Since living in Houston, I’ve had the opportunity to watch our food scene grow and experience it as well. After living in the Heights for many years, my appreciation for the culture and diversity in food changed. I was close to many of the city’s best places and wanted to try not one but all of them. My foodie life has changed and slowed down quite a bit since being diagnosed with Crohn’s in 2019, but I’ve done my best to not let it slow me down. Earlier this year, I decided that I was not done sharing my passion of contributing to celebrating others. I enjoy every aspect of baking and cake decorating, but that’s not why I choose this for my career. I love to celebrate others so they know they are loved. What better way to do that than with something sweet?
No matter the occasion, I firmly believe that food brings people together. This is how Space City Baking Co. was born. Houstonians love their city, the food, each other, and their sports of course! My goal is to contribute to our food culture as a city and create unique desserts to help people create memorable moments. I’ve been blessed to have the support of my husband, family and many friends along the way.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
In 2019, I was diagnosed with Crohn’s disease. It was a difficult transition in my life and put some of my passions on hold as I got accustomed to my new normal. Some days I didn’t have the capacity to do much of anything because of fatigue or treatments. I would have one good day followed by more difficult days. I didn’t feel like myself anymore and really had to figure out how to get back into my creative space where my authentic self would return. I began infusion treatments later that year. My first treatment hit me right in the gut. I was surrounded by others dealing with the same if not much more difficult circumstances such as cancer. As soon as I got in my car, I cried so much. I tried to put things into perspective and told myself all of the things I had to be grateful for. To this day , without a cure, I have tried multiple treatments and continue to push myself forward. I am now an advocate for mental health and colon health as well.

Since 2009, we’ve been delighting our customers with a range of delectable treats, from bite-sized sweets and cookies to custom cakes and elaborate wedding cakes. Something surprising about my work as owner of Space City Baking Co. is that we are 100% self taught. The world of baking and pastry is infinite and continually changing due to innovation and trends. Even though my passion to learn baking began at an early age , I continue to keep up the trends of the industry the same way I did at 15 years old. Completely unrelated to food I started playing drums at the age of nine. I was a member of the Waltrip Band as well as the Wind Ensemble at the High School for Performing and Visual Arts. In my free time, I still play my drum set which is setup in my room along with all of the other crafts I love to do.
