Conversations with Enrique Nieves

Today we’d like to introduce you to Enrique Nieves.

Hi Enrique, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
I started my love for culinary arts as a child preparing and cooking food with my father in Hawaii. He always had me do the simple tasks or tasks that he did not like to do like peeling garlic, peeling green bananas and shredding and soaking salted cod. As a kid i thought it was punishment but as i got older i realized it was a gift that my father passed on to me and i began to love cooking for people because it brought people together.
After high school i joined the US Coast Guard. I was a machinery technician and in law enforcement and drug interdiction for about 7 years and was not happy so i changed my rate in the coast guard to become an FS which is a food service technician. Doing this i was back to my happy place feeding people and putting smiles on there faces.
After my coast guard career i went to Le cordon bleu to further my knowledge of the culinary arts and worked in the pest control industry with my wife’s company for about 12 years in the north west. we decided to make a change in life move to Texas and start a food truck bringing a little fusion of the island flavors of Hawaii and Puerto Rico to Texas. That’s how we got here today with Be Cool, Be Calm Eats an Hawaiian & Puerto Rican Cuisine Food Truck.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Some Challenges we had in the beginning was getting people to understand and try or food. Here in Texas their is not a lot of Hawaiian or Puerto Rican Food options and many people have never tried this kind of cuisine.

Hawaiian and Puerto Rican Cuisine Food Truck.

What matters most to you? Why?
what matters most to me is watching people come together and seeing the smiles and enjoyment when the eat my creations of Food.
