Daily Inspiration: Meet Jai Duque-Zapata

Today we’d like to introduce you to Jai Duque-Zapata.

Jai, we appreciate you taking the time to share your story with us today. Where does your story begin?
Born from the heart of a Filipino kitchen and the hands of a self-taught baker, dessert enthusiast, and now a newly devoted mother, Ube Co. HTX celebrates tradition with a modern twist. My baking journey began in college, inspired by my grandma and the many women entrepreneurs in our family, and truly took shape during the challenges of COVID. What began as a small home bakery has transcended into a community — one that has grown with me through every chapter, including my journey into motherhood. We’ve turned humble beginnings into something lasting: a space where love, resilience, and Filipino flavor meet. Every ube creation is a reminder of our shared roots, evolving dreams, and the sweet bond between a baker and the customers who have become family. From Houston to homes everywhere, Ube Co. HTX continues to elevate Filipino flavor — one heartfelt bake at a time.

We all face challenges, but looking back would you describe it as a relatively smooth road?
It definitely hasn’t been a smooth road. Balancing a growing small business while navigating life during COVID, working full-time, and now stepping into motherhood has been one of the hardest yet most fulfilling journeys of my life. There were nights I questioned if I could keep going — trying to meet orders on little sleep, learning how to grow the business while caring for a newborn, and figuring things out one day at a time. But through it all, my husband has been my rock. He’s my biggest supporter — from helping me bake late at night to cheering me on when I doubt myself. His belief in me keeps me grounded and reminds me why I started. The love and support from him, along with my customers and community, have made every challenge worth it. These moments have shaped Ube Co. HTX into what it is today — a true labor of love, built on passion, perseverance, and the people who believe in it.

Thanks – so what else should our readers know about your work and what you’re currently focused on?
I’m known for creating treats that are not only visually beautiful but also rooted in tradition, flavor, and a sense of home. Previously, I worked for a nonprofit organization while building Ube Co., balancing my passion for baking with my career. Now, I’m in a new season of life as a mother, continuing to run and grow my business while embracing the joys and challenges of parenthood.
What I’m most proud of is how this small business has grown into a supportive community — customers have grown with me through every chapter of my life. What sets me apart is my personal story and approach: I’m a self-taught baker inspired by my grandma and the many women entrepreneurs in our family, and every creation carries that legacy. Each dessert is made with care, love, and the intention of sharing Filipino flavors with a wider audience, turning humble home-baked treats into something memorable and meaningful.

Any advice for finding a mentor or networking in general?
Be authentic, curious, and proactive. Reach out to people you admire, join communities of like-minded individuals, and show up consistently. Over time, genuine connections can turn into mentorship, collaboration, and a network that inspires and supports you.
