Hi Preston, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
I started at the ground level of the restaurant industry, learning operations from the inside out. Over the years, I worked across multiple concepts and roles, gaining a deep understanding of food cost control, labor management, menu development, vendor sourcing, and day-to-day execution. That experience led to opportunities to step in and help underperforming restaurants stabilize operations, improve systems, and become profitable.
By consistently fixing operational gaps and launching new locations, I built a strong track record of opening, rebuilding, and scaling restaurants. Today, I own and operate my own brands, Smyrna Halal Wrap & Grill and Lone Star Halal Tex-Mex, with two additional brands launching soon in Houston. Most recently, my company was awarded an Independent School District (ISD) catering contract, further validating the operational standards and systems we’ve built. Alongside brand growth, I continue to consult and support other businesses using practical, proven systems shaped by real-world experience.
We all face challenges, but looking back would you describe it as a relatively smooth road?
It hasn’t been a smooth road. One of the biggest challenges was building credibility without outside funding or a safety net, while learning to manage cash flow, rising food costs, labor shortages, and operational inefficiencies at the same time. I’ve stepped into restaurants that were already underperforming, which meant fixing problems quickly while keeping the business running.
Another challenge was wearing every hat early on — operations, hiring, training, vendor negotiations, and compliance — often with limited resources. Those challenges forced me to build strong systems, stay disciplined with numbers, and make decisions based on data rather than emotion. Looking back, those obstacles shaped the operational mindset that allows me to run my own restaurant and help others do the same today.

One of my favorite childhood memories is spending time around family who worked hard every day and showed me the value of responsibility early on. Those moments taught me discipline, consistency, and the importance of earning what you have — lessons that still guide how I work and lead today.
