Meet Colin Shine of Frank’s Americana Revival in River Oaks

Today we’d like to introduce you to Colin Shine.

Colin, can you briefly walk us through your story – how you started and how you got to where you are today.
Food was always a huge part of family gatherings, both immediate and extended. Early memories include working in my grandmother’s vegetable garden and snapping green beans at her kitchen table. Most family gatherings were centered around the table, which rooted in me a natural passion for food.

My father has been in the industry for over 40 years, which naturally led to me spending a substantial amount of time in and around restaurant kitchens. I began working in the industry at the age of 15 and continued to do so throughout my college years. Most of my jobs were in the Front of the House, but I was always drawn to the kitchen.

My family acquired Frank’s Chop House in July 2012 and I joined the business shortly after as a bartender and floor manager. At the first opportunity, I transitioned into the kitchen and began working as the sous chef. After a couple of years, I became an executive chef, and continue to hold that position today.

Has it been a smooth road?
Working with members of my family is a very challenging situation. It has brought out the best and also the worst in our working relationships. We know so much about each other that we sometimes find it difficult to be rational, logical, or fair with our thoughts, feelings, and behaviors toward each other.

Despite our differences though, we know that at the end of the day family is all we’ve got and we’re in this together.

We serve American food with a bit of culinary soul and always use the freshest ingredients from the local Farmers Market.

Our “Americana” influences play out across the menu with dishes from across the United States, such as South Louisiana Creole Gumbo and Pan-Seared Snapper with Creole Okra & Tomatoes, all the way to crab cakes with roots in the cuisine of Maine & Maryland.

Southern classics on the menu include Fried Green Tomatoes, Buttermilk Fried Chicken, and legendary, crazy-good Chicken Fried Steak! We also have an extensive wine list, which includes several Wine Spectator Award wines and an outstanding selection by the glass.

We are most proud of bringing the roots and traditions learned from our grandparents to a modern table without much fanfare. We believe in improving on simple flavors and techniques that prove to be timeless.

Is our city a good place to do what you do?
Absolutely. Houston is just beginning to flourish as a destination dining city. It is a large diverse community, with many smaller sub-communities. I believe there is a niche for everyone who has a great product and a unique story to share through food and beverage.
