So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Started working in the oil and gas industry and always had the entrepreneurial spirit simmering in my bones, so I used all of the words of wisdom from elders and other business owners to chart my way, I started with the name that made me feel so good that would want to wake up in the morning and say it many times in many ways but still felt good to my soul… once I had that, I need a logo that does that and even more… that took a two year process and was the most meaningful to me. I knew that there would be a brick wall for someone of African descent to get funding and using the words of my mom “one monkey don’t stop a show.” I had already planned for them by being self-funded, which I know is difficult for most to do, but it is possible… once I had funded, I found a good real estate agent to help with the suitable location… Spring, TX was appealing because of that large amount of Louisiana settlers in the Spring area, plus our product was unique and there was no other like us… when you look at gocajun décor, you would swear it was corporate designed and funded but absolutely not. It was all my design from the color to the last brick… not to mention it to boast and brag but only to inspire someone else that doesn’t think they can do it. Once the brutal construction process was done, we were fortunate to open the door on October 18, 2016, and we have been earning our stripes ever since… I know it seems such a short amount of time, but in restaurant years, it’s almost equivalent to ten hard fought years… lol. I’m now gray-haired, but we are here serving some really good subs…
Has it been a smooth road?
Omg, no. The construction process you almost have to navigate your way through a minefield of crooks, liars, cons, honest, helpful, and not so helpful people and my best advice is to take it! Take that journey through the minefields because whether you succeed or not with that particular business, the product that comes out of the other side will be formattable battered bruised sharp cunning and ready to take on anything that gets in your way, even ten times your size.

gocajun subs specialize in the authentic just the way I eat at home in Louisiana type subs. I brought my family recipes and scoured the bayous for some of the best meats and sausages and boudin we can find. So, our motto is: if we don’t make it, will find the best and par it with our handmade sauces, the best French bread, and home made sides. We have a powerful short menu, we wanted to keep it simple stupid, it’s what the old folks would say, lol… our subs are so delicious and most popular is the Cajun beef aujus (French dip or debris) roasted in house with custom gravy. One lady said she could take a bath in the gravy! Next up is our alligator sausage, our blackened chicken and blackened shrimp all with handmade blackening seasoning, we have crawfish sausage, duck sausage and a host of boudin, seafood, smoked, pepperjack cheese, regular and if you have never had our boudin sub…. omg, you just haven’t lived yet!
We also have sides like red beans gumbo and etouffee. I’m most proud of the guest that have become like family and sharing their lives and they actually love the menu… I’m fascinated with fact that someone loves something that I came up with and they write about it and send their friends and family… never thought a fist bump from a little kid, a picky eater would almost send you to back pantry to wipe tears… so, yeah, it’s pretty cool feeling. It’s why I get up every morning. We set ourselves apart by our raw made fresh in-house ingredients, fresh French bread, our passion, the customers and the smell when you walk in the door is of butter trinity bread and sugars, you know like grandmas… grilling on cast iron skillets, so that should tell you we are serious.
What has been the proudest moment of your career so far?
Unlocking the doors for the first customer and when my mom and dad came to eat for the first time (if I can only elaborate on what they endured just to get me here).
