Chef Welch is the concept creator and owner of Fire Craft Foods, LLC. Chef Welch is an accomplished 25-year veteran of the culinary industry. A long-time Houston resident, Chef Welch has worked in a wide variety of restaurants throughout his professional restaurant career that followed a three-year culinary education and work-tour in France. With Concept Chef and Kitchen Management pedigree from Pappas Restaurants Inc., and Restaurant concept development and implementation in partnership with F&R Foods, LLC, Chef Welch holds firm standards and accountability for himself and his staff.
We all face challenges, but looking back, would you describe it as a relatively smooth road?
Lost an opportunity to develop our commercial property we own due to frontage road expansion. Project was funded by state while permits were in commity in Houston. Road is still under construction four years later to date. We bought a food truck to continue business. Covid came along and since we had some mobility, we were able to service in business and actually increased our territory a bit. The location we are currently in became available, and we jumped on it. City of Houston took eight months to return our approved permits to remodel the space, further stressing our already small budget. All said and done, a year has passed, and we are finally in the space now for a month going strong.

I have a classic French culinary education with degrees in pastry and cuisine. Graduated first in class in 1996 From Le Cordon Bleu in Paris France.
Corporate structure and management/concept chef for Pappas Inc. 8 years
Slow food and southern cuisine/ soul-food style with Cajun and creole.
Well-rounded and adaptable
Networking and finding a mentor can have such a positive impact on one’s life and career. Any advice?
Mentors are essential for growth and development. I like to hang out with people that try hard.
Most individuals are too shy or timid to contact a mentor, but Im here to say find someone to emulate and learn their successful habits.
