Meet Craig Knox

Today we’d like to introduce you to Craig Knox.

Craig Knox

Craig, we appreciate you taking the time to share your story with us today. Where does your story begin?
I was born and raised in the Uptown area of New Orleans, LA, and I’ve been in the kitchen since I was kid; I was taught by 2 grandmother and my loving mother. Little did she know I always watched how she cooked and seasoned her foods so one day, at age of 13, I feel in love with seafood, and by the time I was 19, I mastered a recipe that I’ve stuck with. I was the person that did the boils, whether it was for close family and friends or just for my family in itself, from Crawfish to shrimp to char-grill oysters and Crabs. I came up with name Mudbuggin Seafood just sitting on the porch in New Orleans and from that day forward, it stuck in my head like glue. Through many years of hard work and dedication trails and tribulations, the ups and down of trying to get the Business side off the ground, as I look back on it, I don’t regret it because I looked at it as lessons and not failures. It made me stronger and wiser, and most important, I got my strength from GOD and my 3 sons. I want to thank Captain Sin for not only being there for me for more times than you’ll ever know but especially being there at the  right time when I needed you the most….I appreciate you.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
The road definitely hasn’t been the smoothest of them all from going through a lot personal challenges and setbacks and your business bumps in the road, I’ve always kept the faith and mostly leaned on how I raised on how never to give up “there is a GOD that sits up high and look down low and sees, and he is all-knowing” I mean you name from equipment failures going through other business partners and it not panning out like I thought would, but it wasn’t in his plans, but I must say the people my customers just by seeing the smiles I put on their faces makes it all worth it. I love what I do, and I wouldn’t change it for the world.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
Besides me being a Black Minority Business owner, I’m also a Mechanical Electronics Electrical Engineer, and the hard work I put in to obtain that degree was super hard itself not only was it challenging, it’s even more challenging trying to fit in that world to say the least. Since I was a child, I was the designated electronics guru I became fascinated with putting things together and taking them apart I become I mini-MacGyver lol, but hey, it stuck with me, so I embraced it. I’m like a walking Swiss army Knife. My Brain has the ability to see a problem electronically before it completely breaks down. The one thing I’m most proud of out of my accomplishments is my 3 sons, Rashad, Jordan, and Craig 3rd. They give me everything I need.

Have you learned any interesting or important lessons due to the Covid-19 Crisis?
What I can say I learned the most during covid was patience and learning to understand and appreciate how precious life is and in business, you must have patience all times, no matter how tough things get or how bad things seem I always say, “There is good in every bad situation you just have to find it, but most of all have patience.
