For chocolatier Nermeen Elrayes, the motivation behind her work has always been simple but powerful: a belief that truly high‑quality chocolate should be both delicious and deeply personal. Using premium ingredients—including fine Belgian chocolate—Elrayes crafts custom flavors and sculpted designs that transform chocolate into a creative experience. Inspired by her love of color, art, and heritage, she often incorporates Arabic‑inspired flavors that celebrate cultural traditions while introducing customers to something new. Despite challenges like rising ingredient costs and the constant learning required in chocolate artistry, she continues to refine her craft in hopes of expanding her presence in Houston—sharing handcrafted sweets that turn everyday treats into memorable moments.

Nermeen, you’ve stayed committed to making your chocolates even as the business has evolved—what is it about this work that continues to feel meaningful enough to keep going?
My belief in creativity & in my chocolate’s delicious taste. Also, understanding that good products will be appreciated by customers, made me persistent to work harder to create new delicious flavors and to make my business successful.

What was the original intention behind starting your chocolate business, and how has that purpose shifted or deepened over time?
Starting a chocolate business is to let people enjoy real high-quality chocolate flavors. Customized with their own taste preferences with beautiful chocolate shapes to upgrade their chocolate experience and to make their occasions more special & enjoyable.

My love for art, color & creativity made me keep trying to create new chocolates with more Arabic flavors, to maintain the heritage of my culture, and to give a new chocolate experience to customers.

Can you share some of the challenges you’ve faced along the way, and how they’ve helped clarify what you really want this business to stand for?
Main challenges in the chocolate business are the price of raw materials, as I use premium Belgium chocolate and fresh ingredients for the chocolate filling. Also, the prices of professional chocolate molds, cacao butter, and premium chocolate coloring are becoming higher. The continuous learning of new chocolate molding and making is kind of challenge for me too, with my busy life and family obligations. I use my free time in learning new methods of chocolate art and invest in new raw materials that can help me in my work.  

How do you hope people feel or what do you hope they experience when they interact with your chocolates today?
All my customers enjoy and value the chocolate I make. They know that good quality chocolates is something to celebrate and value as it is delicious and healthy at the same time.

Looking ahead, what is your ultimate goal for this business, both personally and in terms of the impact you want it to have on others?
My goal is to have more exposure to the chocolate market in Houston and grow my customer base steadily.
