Today we’d like to introduce you to Jose Delgadillo.
Hi Jose, we’d love for you to start by introducing yourself.
I was born in Aguascalientes,Mexico been here almost all my life. On My days off I enjoyed bbqing for all my friends and family. I started during the pandemic as a pop up food vendor hauling our smoker. My background was oil & gas and during Covid they were shutting down rigs which means not a lot of work. We started selling backyard BBQ in our driveway. As we got busier we started doing markets ,bars, and events. Keep in mind this was just a side hustle to make ends meet, until I took the risk to gamble on myself and go all in! As i got busier doing it full time I invested in a brand new 30 ft mobile food unit to make us more efficient. Then the smoker I started with wasn’t enough we were selling out too fast so I said let’s go bigger! I invested in 2 500 gallon smoker’s that can now cook 48 briskets at once. I like to smoke overnight and serve everything fresh from scratch daily until it’s all gone & then do it again!
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
The biggest challenges we faced besides getting robbed was the cost of living going up and beef prices sky rocketing 30% every 8 months. Brisket was $2.12 per pound and now we pay $7.99 per pound. There was days we didn’t sell much so we would just feed it to the homeless or give it away to our customers. Starting a business from scratch with no experience or guidance has been a learning experience 6 years of trial and error but I share my mistakes with others so they don’t go through what I did.
Alright, so let’s switch gears a bit and talk business. What should we know?
We offer Traditional Texas Barbecue with a Mexican twist!. I like to use spices and herbs from Mexico. We offer catering from 20-1000 guest. We also like to serve those in need when families go through tragedies. We’ve hosted a lot of benefits and I never charge because tomorrow that could be us. I love giving back to my community where I grew up from because it’s a low income neighborhood. We like to toy drives and back to school drives and feed our veterans for free. Barbecue brings people together no matter what age gender or race and today most of the customers my food brought in are now friends some even family now.
We all have a different way of looking at and defining success. How do you define success?
Success comes with hard work, dedication and most importantly consistency. Being consistent is a challenge in the barbecue industry. Small goals help accomplish big goals setting a standard helps the business, at home and in life. Some days are hard i just want to pull my hair and quit, but i can’t give up on my dreams for just 1 bad day. I look back at how I started and where I am today and I’m only getting better by the year at my craft.
