Hi Morgan, thanks for joining us today. We’d love for you to start by introducing yourself.
I am a Wife, Mom, Chef, Entrepreneur and Leader in my community.
Wellness has been the backdrop of my life for as long as I can remember. Growing up as an athlete, the physical side of health-the protein shakes and the supplements-was second nature. But as I grew up, I realized that fitness was actually the easiest pillar to maintain. What people rarely talk about it the silent work: Mental and Spiritual wellness.
The real shift happened when I was diagnosed with Hashimoto’s disease. Suddenly, my relationship with food had to change. I was faced with a daunting decision: feel limited or innovate.
I felt like a mad scientist in the kitchen. Swapping out inflammatory ingredients for alternatives that supported a restrictive diet without sacrificing the joy of a good meal.
Soul Fuel Tx was birthed from the idea that nourishment should be vibrant, inclusive and restorative – not a chore.
We all face challenges, but looking back would you describe it as a relatively smooth road?
It has definitely not been a smooth road – and I did not expect it to be.
I’ve learned that the trial is where the transformation happens. If you do not endure the struggle, you lack the perspective to truly celebrate the breakthrough.
Struggles I had along the way were mainly mental – This goes back to all-around complete wellness.
Launching a Food Truck was a goal on my list, but I did not know it would come so soon.
Truly believing in myself and noting that if I was not ready for this – God would not have given it to me.

I am the owner of Soul Fuel Tx Food Truck where the mission is to prove that healthy eating is not just a requirement- its a lifestyle that can be inventive, vibrant and most importantly effortless.
The menu is a curated mix of Signature Rice Bowls & Comfort Wraps, Fresh Juices, Acai Bowls and so much more.
I don’t just want to feed people; I want to empower them, I teach interactive cooking classes and show my community how simple it is to swap out traditional ingredients for healthier alternatives without losing the ‘soul’ of the dish.
I also give back to my community by hosting community cooking classes and kids summer cooking camps.
If I had to pick one thing that I am proud of myself for; it would be the audacity to take risks. Every major milestone in this business came from a moment where i was not “ready”, but I jumped anyway. I have learned that you do not wait on the perfect moment to start. Believe Now and See Later.
