We recently had the chance to connect with Courtney Lindsay and have shared our conversation below.
Courtney, a huge thanks to you for investing the time to share your wisdom with those who are seeking it. We think it’s so important for us to share stories with our neighbors, friends and community because knowledge multiples when we share with each other. Let’s jump in: What do the first 90 minutes of your day look like?
The first 90 minutes of my starts off with feeding my spiritual appetite with the bible reading and devotional. Then I catch up on the daily government headlines and news. Followed by waking my two boys Chase and Cai for school.
Can you briefly introduce yourself and share what makes you or your brand unique?
Hi, I Chef Courtney Lindsay of Mo Brunch and Brews, Sauce Co Foods, and Daily Threads. I got my start in culinary after serving my country in the United States Army; attending culinary school to become a chef. While catering in Houston, I decided to develop a line of hot sauce the morphed into Sauce Co Foods. That business venture led to me getting into the food truck space. I was able to leave the corporate world and became a fulltime chef, owner, operator of my first food truck. Also, by that time I had converted fully to a plant based diet so that made business model a little more complex in Texas. By using the same culinary techniques that leaned in school, I was able to apply that to my approach to cooking plant based. I was able give people great flavor just minus the meat, which set us apart from other companies. I used my first food truck to launch over five different concepts in the city and one of which was our first brick and mortar Mo Brunch and Brews. We are now going on our fourth year at Mo Brunch and Brews and I have more time to focus on other projects like the latest, Daily Threads vintage clothing store.
Okay, so here’s a deep one: What’s a moment that really shaped how you see the world?
One of the moments that shaped how I see the world is when I determined that I was intitled to see the world even though I didn’t always have all of the resources giving to me. I stood on the campus of Texas Southern University and made a declaration to myself that I would achieve in my studies and be the best version of me and that I would trust God in ordering my step but always moving in a forward motion .
What did suffering teach you that success never could?
Suffering or lack taught me how to get back up and never quit.
So a lot of these questions go deep, but if you are open to it, we’ve got a few more questions that we’d love to get your take on. What are the biggest lies your industry tells itself?
The biggest lies in my industry are that it easy and everyone can do it. This couldn’t be further from the truth because to be honest most people have the stomach for the stress that comes with the business. After nine years of warring in the food service space; I’m just now to a point that I can somewhat relax. I believe the key to my peace is realizing what my enough is. I spent nine years stressed out about how to grow and now I know that was approaching growth the wrong way. I should have been growing deeper and not higher. I should have been growing like the 20-year-old, one foot bonsai tree instead of trying to grow like the five-year 20foot tall pecan that falls from the first gust of 100-mile winds.

If I have nothing I will still be a man of God.
