Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
Hello, everyone. I’m Janica King, the creator of Down South Jams & Jellies. “Where everything is sweeter in the south.”
What originally started out as a hobby quickly became a passion, to bring fresh fruit flavors to your table anytime of year, and it’s been blossoming ever since.
I make a variety of jams & jellies, from your classic strawberry to a more adventurous peach habanero.
I aquire the majority of my fruit harvested from my backyard or local farmers. From the field to the table, packed full of sweet mouthwathering freshness!
We all face challenges, but looking back would you describe it as a relatively smooth road?
Anything worth doing is never going to be easy as my father would tell me when I was struggling to draft my logo design, listening to my worries about not being good enough.
During Covid, some things like jars, lids, sugar, etc were hard to find in stores and online.
Not being able to go out to local farms to get peck fresh ingredients was another road block.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I specialize in jam, jelly, and vanilla extract.
I do prefer to make more exotic combinations like raspberry chocolate jam, vanilla jelly, or even my spicy peach habanero.
My vanilla extract is made with Madagascar vanilla beans. I steep the vanilla for a full year before filtering and processing into jars.
If you had to, what characteristic of yours would you give the most credit to?
Fresh produce, no preservatives, getting back to basics. Knowing what’s in our food, shouldn’t be complicated.
