Hi Jeremy , so excited to have you with us today. What can you tell us about your story?
I was fortunate enough to be working in cafes when 3rd wave coffee first appeared in our city. It has been an amazing journey which continues to surprise me.
Having worked numerous shops around the city; has created a lot of familiar faces , & I enjoy adding a level of comfort to someone’s morning
Participating at SCA in my home city this year was an amazing experience; all thx to this little magic bean!
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Working for owners or projects that were under capitalized is never fun. But I have learned as much from failed projects as successful ones! If something works, copy & paste. If it doesn’t; reverse engineer to avoid similar problems
Appreciate you sharing that. What else should we know about what you do?
Having lead the launch team for SIPHON coffee; I learned early on the importance of systemization. As a result, there are cafes using scheduling & tip distribution templates I created years ago w repeated success, which is immensely satisfying.
I was fortunate enough to work w high caliber chefs such as Anita Jainsinghani of Pondicheri; & Adam Dorris of Stella Sola.
My coffee mentor Sean Marshall i Fusion Beans & I have functioned as tag team consultants on various cafes & pop ups; and partnered to launch ESET brand Ethiopian coffee in North America- beginning with SCA in Houston.
My love for Ethiopian language & culture is finding synergy with my coffee career; & I hope to be cupping at source one day.
Who else deserves credit in your story?
Currently working for Tio & Kenzel Fallon of Three Keys Coffee. These people do it right. Quality coupled with approachability. Max Gonzales of Amaya Roasters & Catalina coffee , was a supervisor of mine back when he was telling strange stories about standard sizing & cupping notes on espresso’. (Probably 2001)
Avi Katz of KATZ coffee fame should be shouted out; I knew him when he was delivering me Lola Savannah coffee! Avi built independent coffee in Houston.
The old school crew of the long extinct Taft Street Coffee. We were a watershed of burgeoning coffee culture in Houston.
