Community Highlights: Meet Kaitlynn Williams of Kait’s Bakes

Today we’d like to introduce you to Kaitlynn Williams.

Hi Kaitlynn, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
I’ve always loved baking, but what started as a hobby quickly became something much more meaningful. While working full-time as a Registered Nurse in women’s services, I found baking to be a creative outlet and a way to slow down after busy shifts. I began experimenting with sourdough and sharing my baked goods with family, friends, and coworkers, and their encouragement gave me the confidence to turn my passion into something bigger.

That’s how Kait’s Bakes was born. What started with a few loaves and cookies has grown into a home-based cottage bakery focused on small-batch sourdough breads, pastries, and sweet treats made with quality ingredients and a lot of love.

Balancing nursing and running a bakery has definitely been a learning experience, but I truly enjoy creating something that brings people together. Recently, I’ve started participating in local markets, which has been exciting because it allows me to connect with the Houston community and meet the people who support my business.

Today, I’m continuing to grow Kait’s Bakes while staying true to why I started in the first place: creating delicious, homemade baked goods that help make everyday moments feel a little more special

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Like any small business journey, it definitely hasn’t been a completely smooth road. One of the biggest challenges has been balancing my full-time career as a Registered Nurse with running Kait’s Bakes. Many of my bake days turn into late nights and early mornings, and there have been plenty of moments where the workload felt overwhelming.

I’ve also had my share of baking failures and recipe tests that didn’t go as planned. Working with sourdough teaches patience, and sometimes things simply don’t cooperate. Those experiences have pushed me to keep learning, adapting, and improving.

Despite the challenges, I’ve learned that growth doesn’t happen without a little discomfort. Seeing customers enjoy my products and support my business makes the long nights and hard work worth it. Every obstacle has taught me something and helped shape Kait’s Bakes into what it is today

We’ve been impressed with Kait’s Bakes, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Kait’s Bakes is a home-based cottage bakery in Houston specializing in small-batch sourdough breads, pastries, cookies, and seasonal treats. What started as a creative outlet outside of my career as a Registered Nurse has grown into a business built around quality ingredients, handcrafted products, and creating something people can gather around and enjoy.

One thing that sets Kait’s Bakes apart is that everything is made in small batches with great attention to detail. I love experimenting with unique flavors while still offering classic favorites, and I take pride in making products that feel homemade and comforting. Sourdough has become a true passion of mine, and I enjoy sharing that passion with my customers.

I’m most proud of the community that has grown around my business. The support from friends, family, coworkers, and customers has been incredible, and seeing repeat customers come back for their favorites means so much to me.

At the heart of Kait’s Bakes is the belief that food brings people together. Whether someone is ordering a loaf for their family, cookies for a celebration, or picking up treats at a local market, I hope every item feels special and made with love.

Is there a quality that you most attribute to your success?
I believe perseverance and having a strong support system have been the biggest contributors to my success. Building a business while working full-time as a Registered Nurse requires dedication, and there have been plenty of late nights and early mornings along the way.

I also wouldn’t be where I am without the constant encouragement from my husband, family, friends, and my sweet coworkers at the hospital. Their support and belief in me have given me the confidence to continue growing Kait’s Bakes, and I’m incredibly grateful for the community behind me.
