Conversations with Chef Joshua Davis

Today we’d like to introduce you to Chef Joshua Davis.

Hi Chef Joshua, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
My journey started with a simple passion for cooking that grew into a lifelong purpose. Growing up in Louisiana, I fell in love with the rich flavors and traditions of Cajun and Southern cuisine. That passion led me to attend Le Cordon Bleu, where I sharpened my culinary skills and committed myself to becoming the best chef I could be.

Over the years, I’ve worked my way up through the kitchen, from line cook to Sous Chef and Executive Chef, gaining experience in fine dining, high-volume restaurants, catering, menu development, and leading kitchen teams. Along the way, I also earned my MBA, giving me the business knowledge to build something of my own.

Life hasn’t always been easy. In 2025, I was an innocent bystander in a shooting that changed my life. I spent months in the hospital, lost my home and car, and had to rebuild from the ground up. That experience tested my faith, resilience, and determination, but it never took away my passion for cooking. Instead, it gave me an even greater appreciation for life and a stronger drive to succeed.

Today, I’m proud to be the owner of Smoove Cajun Catering and continue pursuing excellence as a chef. My mission is to create unforgettable dining experiences while inspiring others through my story of perseverance, faith, and hard work. Every meal I prepare represents where I’ve been, what I’ve overcome, and where I’m headed.

We all face challenges, but looking back would you describe it as a relatively smooth road?
No, it definitely hasn’t been a smooth road. The culinary industry is demanding, and success doesn’t happen overnight. I’ve had to work my way up by proving myself in every kitchen, putting in long hours, sacrificing time with family, and constantly learning how to become a better chef and leader.

One of the toughest moments in my life came when I was caught in the middle of a shooting as an innocent bystander. That experience forced me to step away from the career I love while I recovered. It tested me physically, mentally, and emotionally, but it also reminded me how quickly life can change and how important it is to never take opportunities for granted.

As I recovered, I made a promise to myself that I wouldn’t let my circumstances determine my future. I focused on rebuilding my career, growing my catering business, and creating new opportunities for myself. Every setback has become a lesson, and every challenge has made me more determined to succeed. Today, I appreciate the journey because it taught me resilience, patience, and the value of hard work.

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I’m an Executive Chef and the owner of Smoove Cajun Catering, where I specialize in Cajun, Southern, and elevated comfort cuisine with a fine dining approach. Over the years, I’ve led kitchen teams, developed menus, managed food costs and operations, and catered everything from intimate private dinners to large events. My goal is always to create food that not only tastes incredible but also brings people together and leaves a lasting impression.

What I’m most proud of isn’t just the food I create it’s the journey behind it. After overcoming life-changing adversity, I fought my way back into the kitchen and continued pursuing the career I love. That experience gave me a deeper appreciation for every opportunity and strengthened my commitment to excellence.

What sets me apart is my combination of culinary skill, leadership, resilience, and passion. I don’t just cook meals I create experiences. I bring Louisiana roots, fine dining techniques, strong business knowledge, and a genuine love for serving people into everything I do. Whether I’m leading a restaurant kitchen or catering a special event, I approach every plate with creativity, consistency, and the mindset that every guest deserves my very best.

Who else deserves credit in your story?
I definitely didn’t get here alone. First and foremost, I give all the glory to God. My faith has carried me through every challenge and has given me the strength to keep moving forward, even during the toughest seasons of my life.

I’m also incredibly grateful to my family and close friends, who never stopped believing in me. Their encouragement and support kept me motivated when I was rebuilding both personally and professionally.

Throughout my culinary journey, I’ve been fortunate to work alongside talented chefs, restaurant owners, and kitchen teams who challenged me to grow. They taught me discipline, leadership, attention to detail, and what it truly means to serve guests with excellence. Every kitchen I’ve worked in has helped shape me into the chef I am today.

Lastly, I’m thankful for every client who has trusted Smoove Cajun Catering with their special moments. Whether it’s a wedding, private dinner, corporate event, or family celebration, their support has allowed my business to grow through repeat business and word of mouth referrals. Their trust inspires me to continue raising the standard and delivering unforgettable experiences with every meal.
