Today we’d like to introduce you to Olivia Freitas.
Olivia, we appreciate you taking the time to share your story with us today. Where does your story begin?
I started thinking about this business in early 2025, trying to formulate an idea for a side gig for myself that I could see being a valuable addition to the market. My husband and I thought about the fact that everyone loves donuts, but there are hardly any alternatives to the regular donut shop. So I began to brainstorm a “healthy” alternative, and we came to the idea for Olly Organic Donuts. These donuts are made from scratch, using organic ingredients, and using no seed oils – I fry them in coconut oil.
We all face challenges, but looking back would you describe it as a relatively smooth road?
It has been as smooth as can be expected for a completely new business. There were many months of research regarding recipes, equipment, and business models. I’ve experimented a lot with ingredients and fry oils. I considered a food truck or stand alone store, but eventually decided I did not want to take out a business loan right now, so I started the business in my home, under Texas cottage food laws. There is also the challenge of trying to source all of my ingredients from reputable places, in bulk, that are all organic, but I think I’ve found a decent system for now.
Thanks – so what else should our readers know about your work and what you’re currently focused on?
I’ve worked in several different fields throughout my life, from horses/ranching, to aviation, to non-profit work. I also love to write and make music when I have a spare moment. Right now, I’m a new wife and mother, and nothing will ever come close to the significance and fulfillment I have with my family. I started this side business as a way to potentially bring in some extra cash for my family, while still being able to dedicate the majority of my time and devotion to them. The major difference you’ll find with me vs. conventional donut shops is obviously going to be the ingredients I use! I’ve found that most shops are using a powdered mix for their dough and premade toppings from a food plant. There’s tons of additives, corn syrups, dyes, seed oils, and other ingredients we don’t want to consume regularly. A lot of my customers love the fact that they can eat my donuts without feeling groggy and gross for the rest of the day!
What sort of changes are you expecting over the next 5-10 years?
I could easily see more businesses like mine becoming popular! Many consumers are becoming more cautious about what they put into their bodies, especially when it comes to seed oils. There is a lot of information out there about what these oils do to our bodies and our cells. So, thankfully, I think this industry will grow over the next few years!
