Today we’d like to introduce you to Chef Briy.
Chef, we appreciate you taking the time to share your story with us today. Where does your story begin?
It all started in 2020 when I moved into my very first apartment. As a young adult on a strict budget, eating takeout every day wasn’t an option, so I turned to the meals I grew up watching my mom and grandmothers make. Re-creating those dishes quickly taught me the joy of homemade food. I found myself cooking five days a week and treating myself to takeout only on weekends.
When the holidays rolled around, I started bringing some of my favorite dishes to family gatherings. My Cajun Pasta—now a crowd favorite—became the number-one request. Soon, family friends were asking me to cook for their small and intimate events, and that’s when I realized how much passion I had for creating food that brings people together.
I developed a special love for brunch dishes, and my Shrimp & Grits recipe is one people still rave about. My slogan, “A taste of Cajun where it feels at home,” truly reflects the heart behind everything I make.
Today, I specialize in a variety of cultural dishes—from bold Tex-Mex favorites like Pulled Pork Texas-Loaded Nachos, to comforting Granny-style Soul Food, to classic everyday comfort meals. What began as a necessity has grown into a craft, a passion, and a way to share love through flavor.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
The road has not been the easiest. Shortly after I started cooking professionally, I made the bold decision to resign from my 9–5. I hit the ground running with 3–4 bookings per week and quickly expanded my services—brunch orders, date-night menus, meal prepping, and full-service catering experiences.
COVID became both the beginning and the peak of ThaBombDishes, as people were looking for comforting, homemade meals. But by the end of 2023, business slowed down as inflation began to rise. I had to get creative, & think fast so I shifted to daily plate sales while still taking bookings whenever they came in.
Through every season—highs, lows, and everything in between—I stayed committed to my passion for cooking and creating dishes that make people feel at home.
Can you tell our readers more about what you do and what you think sets you apart from others?
I absolutely love cooking. Put a pot and a spatula in front of me and just watch what I can do. The kitchen is my “safe place.” When I’m behind the stove, I disconnect from the world and slip into my own little zone. From cutting and dicing veggies to creating beautiful plating and presentation, every step brings me joy.
My specialties are definitely my brunch dishes and pasta creations—two categories where my creativity truly shines. What I’m most proud of is the number of returning clients I have, and the fact that my family and friends always refer me to others when someone is looking for a catering vendor. Their trust means everything to me.
What sets me apart is the heart I put into every dish. I don’t just cook—I create an experience that feels like home. Every recipe is made with intention, love, and the same care I give to my own family. I bring comfort, flavor, and authenticity to every plate.
Is there a quality that you most attribute to your success?
Creativity – From Cajun dishes to brunch plates, I’m always experimenting, improving recipes, and finding new ways to elevate flavor. Creativity is what keeps my menu fresh and uniquely “me.”
