Daily Inspiration: Meet Louis Correa

Today we’d like to introduce you to Louis Correa.

Hi Louis, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
Well, my name is Louis. I am a 29 years old, openly gay and married, self taught baker born and raised in Houston, Texas. I have resided in Spring, Texas since I was 4. When we were little, I would watch my mom bake and decorate cakes for our family’s birthdays and gatherings. I was always infatuated with the baking. Loved being able to lick the spatula and the bowl from the leftover cake batter. LOL Around 2006, I started to help my mom with some cakes. Our first cake together was a huge SpongeBob cake that we cut up and made to look like the character himself. Ever since that day, all I wanted to do was be like my mom and make cakes for people I started watching food network shows. My favorites were ACE of Cakes, Cupcake Wars and Cake Boss. Once social media came around, I started following really amazing artists on socials and loved what they did. For example, Bree’s Cakes was my favorite of all time. In 2016 I started baking all my cakes from scratch, except for the fondant. But now I have an amazing clientele who LOVE and rave about my sweets. Around the same time, I helped my cousin make and decorate some sugar cookies for her daughter’s birthday party. That is when my Jr’s Snaps took their shape. Jr’s Snaps are my decorated sugar cookies, which are my all time customer favorite. I have my secrets and my tricks to make them the way they are. Now I am the go to “Cookie Guy” or like some call me the “Cookie Assassin”. I love what I do, but I have also had my doubts to continue. If it wasn’t for my mom or my husband, I wouldn’t be where I am today. They have shaped and helped me become the Jr’s Sweets I am today. I recently lost my mom in November of 2021 and I really wanted to give up. She was the entire reason I got into baking. But I wanted to carry her memory and legacy and pass it down to any future kids I have, and to spread her word. With every order, I give an extra “Thank You” cookie in the shape of a purple butterfly, so that I honor her with every order.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It has been a smooth road. There have only been a few hiccups down the way. As stated, losing my mom. Sometimes my mental health will get the best of me and there are days I want to give up but I don’t. I just take a much needed break and then come back baking and decorating in full force. Also being an openly gay male, I do lose some clients because of people’s point of view but it is okay. I respect everyone’s feelings and views. But for every client I lose, I usually tend to gain about 10 more. Which is AMAZING. The last struggle I would say is that I have Arthritis. So using my hands for my full time job plus baking and piping, can definitely take a toll on my. But I get it done because this is what I love to do. My dream is to have my own small storefront or even just a commercial kitchen I can bake and decorate out of.

I specialize in cakes, cupcakes, and decorated sugar cookies ( Jr’s Snaps). I am most proud of how far I have come with my small business. Growing it from nothing and having the help of my family. And definitely, the customers who always review and tell their friends and families about. And that makes me happy, the nonstop growing of Jr’s Sweets.

What do you like and dislike about the city?
What I like best about our city, is the amount of possibilities we have to grow as a business. The endless amount of customers and ideas.
