Exploring Life & Business with Linda Morales of HoneyBrew Coffee Co.

Today we’d like to introduce you to Linda Morales.

Hi Linda, thanks for joining us today. We’d love for you to start by introducing yourself.
The journey of creating craft coffee started when my husband surprised me with a Breville Barista Pro for our 6th anniversary. This machine was a major upgrade from our current Nespresso, which only had one button, compared to the many knobs and buttons the Breville had. I was so excited to learn the technique of brewing a creamy shot of espresso. I first searched on TikTok, “how to use the Breville Barista Pro”. There were so many helpful videos that made this process so easy. Except it didn’t seem so easy to me. After 3 weeks and 2 bags of beans later, I finally created an 18-gram in and 36-gram out double shot of espresso in about 30 seconds. IYKYK.

So it began: every morning I looked forward to making my cup of coffee and testing out different syrups, and that quickly turned into making coffee for my husband and family.

One day, I was scrolling through Instagram and came across the company “Brightside Coffee” – a mobile espresso bar.
I thought to myself, this was a pretty cool idea. Bringing the coffee bar experience to special events.I knew that I wasn’t ready for this because I didn’t have the high-end, expensive equipment as they did.

After almost a year of having this thought of starting my own coffee cart, and a push from some of my friends, I went for it. But with my Breville that my husband bought me. I knew that I had to start somewhere, with hopes to eventually upgrade my equipment when I had the money to do so.

I launched HoneyBrew Coffee Co, LLC on September 25th. I had my first public event on September 27th and booked my first private party on October 11th and that’s when it truly began. I invested in a social media manager who helped gain traction in the surrounding areas. One event led to another and by November, I upgraded my Breville to a commercial espresso machine. This lit a fire in me. I was so excited and happy on how well this was all going. By the end of 2025, I had about 19 events under my belt.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Starting and running a business is never easy, and I think a lot of entrepreneurs make it look so seamless.
Some of the struggles I faced was the Breville not being able to keep up with the demand in large capacity settings. It was not a powerhorse; it was a good machine for small parties, but when it came to those cooler months when guests wanted hot coffee, it definitely slowed the process down, which meant the wait time was a little longer. Thank goodness for the upgrade; it made such a big difference.

We’ve been impressed with HoneyBrew Coffee Co., but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
HoneyBrew Coffee Co. is a mobile coffee cart that brings the coffee bar experience to you and your guests. When you book with us you bring the experience that your guests/employees/team will appreciate rather than using the community coffee pot that no one likes drinking but has to drink to keep them awake.

Risk taking is a topic that people have widely differing views on – we’d love to hear your thoughts.
I am definitely in between when it comes to taking risks. I have to talk it out and write it down on paper. It has to make sense money-wise. Nobody wants to be in debt when starting a business and no one wants to fail in starting a business and definitely no one wants to start a business, fail, and be in debt.

Lucky for us, we started hosting on Airbnb and was able to use the funds from there to start HoneyBrew Coffee Co. That was another risk we took back then as well which now led to another business opportunity a few years later.
