Sylvia Pennington has transformed a lifetime of challenges into a legacy of purpose, entrepreneurship, and service. A proud New Orleans native, wife, mother of two daughters, entrepreneur, and executive chef, she continues to inspire others by proving that perseverance and faith can turn even life’s greatest obstacles into extraordinary opportunities.
Sylvia’s love for cooking began in New Orleans, Louisiana, where she was born and raised in the heart of the city’s rich Creole culture. Growing up wasn’t always easy. Her childhood was filled with challenges that required strength beyond her years, but those experiences shaped the resilient woman she would become. Along the way, caring mentors, teachers, and members of her community encouraged her, reminding her that her circumstances did not define her future.
Determined to build a better life, Sylvia excelled academically and graduated from L.B. Landry High School in **2004**. Following graduation, she enrolled at the **Culinary Institute of New Orleans**, determined to pursue her passion for cooking professionally.
Just as her culinary journey was beginning, disaster struck. In **2005**, Hurricane Katrina devastated New Orleans, forcing Sylvia and her family to evacuate their hometown. Like thousands of others, she faced the heartbreaking reality of rebuilding her life from the ground up. Although Katrina changed the course of her life, it never changed her dream.
After relocating to Arkansas, Sylvia worked various jobs while raising her family and refusing to let go of her vision of becoming a restaurant owner. Her faith, determination, and love for authentic Creole cuisine remained the driving force behind every step she took.
That dream became reality in **2021** when she opened **SAPS Creole Cuisine** in North Little Rock, Arkansas. What began as a vision quickly became one of the city’s most recognized culinary destinations, celebrated for bringing authentic New Orleans flavors to Arkansas.
During her time in Little Rock, Sylvia earned numerous awards, honors, and business recognitions for her leadership, culinary excellence, and community impact. She became known not only for exceptional food, but also for mentoring aspiring entrepreneurs, supporting local organizations, and promoting healthier approaches to Southern cooking without sacrificing flavor.
As her business continued to evolve, Sylvia recognized new opportunities for growth. In **2026**, she made the bold decision to relocate SAPS Creole Cuisine to **Houston, Texas**, positioning the company in one of the nation’s fastest-growing culinary markets and creating a stronger financial foundation for future expansion.
Today, SAPS Creole Cuisine has evolved into a **corporate catering company**, specializing in high-quality business events, executive meetings, conferences, and private corporate functions. Sylvia has also launched **The Morning Roux**, a breakfast and lunch concept located inside **Picnic Food Hall** in Houston, bringing New Orleans-inspired comfort food to a new audience.
Beyond business, Sylvia is passionate about creating opportunities for the next generation. She is currently developing a girls’ mentorship program dedicated to empowering young women through leadership, life skills, confidence building, and entrepreneurship. Her mission is to help girls overcome obstacles, discover their purpose, and believe in their own potential.
Today, Sylvia is married and the proud mother of two daughters, ages **21** and **12**. She credits her faith, resilience, and unwavering determination for carrying her through every chapter of her journey.
Looking back, Sylvia sees every setback as preparation for something greater.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
My journey has not been an easy one.
As a child, I experienced a difficult home environment that often left me feeling afraid and uncertain about what each day would bring. During those years, I learned to be constantly alert and protective of myself, experiences that forced me to grow up much sooner than most children.
Although those years were painful, I was blessed to have caring individuals who believed in me, encouraged me, and reminded me that my circumstances did not determine my future. Their kindness and guidance gave me hope during seasons when I needed it most.
In 2005, Hurricane Katrina changed my life once again. Just weeks before the birth of my oldest daughter, my family was displaced along with thousands of others. Like so many families, we were forced to start over and rebuild our lives from the ground up.
Life continued to present challenges, including the end of a difficult marriage and seasons where I questioned whether I would ever accomplish the dreams God had placed in my heart. During one of the lowest points in my life, I prayed daily for peace. That season strengthened my faith and reminded me that even when life feels uncertain, God is still working behind the scenes.
Looking back, every obstacle taught me resilience, strengthened my character, and prepared me for the woman and business owner I am today.

SAPS Creole Cuisine is a New Orleans-inspired catering company that specializes in corporate catering, private events, weddings, nonprofit events, and pop-up dining experiences. Our focus is bringing authentic Creole flavors to every event while providing dependable, professional service. We believe great catering is about more than food—it’s about creating an experience that people remember.
In 2026, I expanded the brand by launching The Morning Roux, a breakfast concept designed for busy professionals looking for bold, comforting breakfast options with a New Orleans twist. The menu features customizable breakfast bowls, burritos, and Southern-inspired favorites that are quick, flavorful, and made from scratch.
What I’m most proud of is that both brands reflect who I am. SAPS represents hospitality, quality, and authentic Creole cooking, while The Morning Roux shows that we can take traditional flavors and present them in a fresh, modern way. I don’t try to be the biggest catering company—I strive to be one that people trust, recommend, and remember because of the quality of our food and the care we put into every event.
Beyond business, my heart is focused on creating opportunities for the next generation. My girls’ mentorship program is one of my greatest passions because I want young women to know they are capable, valuable, and worthy of achieving their dreams regardless of where they begin.
For me, success is no longer measured only by the businesses I build, but by the lives I have the opportunity to impact.
What do you like best about our city? What do you like least?
One of the things I love most about Houston is its diversity. The city has an incredible food scene, a strong entrepreneurial community, and people who genuinely support local businesses. It’s a place where creativity is welcomed, and there are so many opportunities to grow and connect with others. I also love spending time with my family, creating new recipes, mentoring others, traveling, and seeing people enjoy a meal that brings them comfort and joy.
If I had to pick one thing I dislike, it would definitely be the traffic. Coming from a smaller city, that adjustment took some getting used to. But it’s a small trade-off for everything Houston has to offer. The opportunities, culture, and sense of community make it a city I’m proud to call home.
