Hidden Gems: Meet Bing Wang of Yokohamaya Japanese restaurant

Today we’d like to introduce you to Bing Wang.

Hi Bing , we’d love for you to start by introducing yourself.
My journey in the culinary industry began nine years ago when I opened my first Japanese restaurant. It was a bold step driven by a passion for authentic flavors and the desire to create a welcoming space for the community. Building on that foundation, I expanded five years ago by opening my second location, further establishing our brand’s reputation for excellence. Two years ago, I reached another milestone by launching my third venture—a Japanese fast-casual concept located in a local mall, designed to bring high-quality Japanese cuisine to a broader, fast-paced audience.
In the early years, my husband was instrumental in shaping our culinary standards; his expertise in food quality and recipe development provided the technical backbone of our restaurants. As I have grown as a small business owner , I have transitioned into an independent leadership role, focusing on brand evolution, aesthetic innovation, and creating unique customer experiences.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It has definitely not been a smooth road. When I opened my first restaurant nine years ago, I had zero experience in the industry—only a relentless spirit and a willingness to work hard. At that time, the Cypress area was very different; there were no major office complexes, hospitals, or even a Costco nearby. It was strictly a residential area, and with our limited marketing at the start, the first two years were incredibly challenging.
We faced significant financial losses early on, but I viewed every struggle as a lesson. It took two years of persistence and learning from our mistakes before the business finally found its footing and began to grow. I am profoundly grateful to the local residents who supported us during those lean years; their loyalty is the reason we were able to turn things around and eventually expand to three locations

Appreciate you sharing that. What should we know about Yokohamaya Japanese restaurant ?
Our restaurant is built on a commitment to authenticity and the belief that the best flavors come from scratch. What truly sets us apart is our dedication to handmade ingredients; for instance, our signature ginger dressing is made fresh with real ginger for a vibrant, healthy, and refreshing taste.
The heart of our kitchen is led by Jeff, a seasoned sushi chef with 20 years of expertise. He meticulously crafts our own house-made sushi vinegar, eel sauce, and spicy mayo, ensuring a flavor profile you won’t find anywhere else. Beyond our sauces, we are best known for the generous proportions of our rolls—we focus on “more fillings, less rice,” ensuring every bite is packed with premium ingredients. This dedication to value and quality is why we have consistently earned high praise from our community. Brand-wise, I am most proud of our reputation for never cutting corners and providing a dining experience that feels both premium and personal

We’d love to hear about any fond memories you have from when you were growing up?
While I don’t have one single standout memory, the ones I cherish most revolve around food and family during the Lunar New Year. I vividly remember the entire family gathering to prepare the reunion dinner. While our parents were busy cooking, my brother and I would linger nearby, playfully “stealing” bites of the delicious food before it even reached the table. Those moments of laughter and the aroma of home-cooked meals were my earliest introduction to the joy that food brings when shared with loved ones. It’s that same sense of warmth and togetherness that I strive to bring to my customers today.
