Hidden Gems: Meet Donovan Deville of EPICUREAN CUISINE

Today we’d like to introduce you to Donovan Deville.

Hi Donovan, so excited to have you with us today. What can you tell us about your story?
I was born and raised in Louisiana, where my love for food began. Growing up in the South, surrounded by family traditions and home-cooked meals, gave me a deep appreciation for the connection between food, culture, and community.

When I was 14, my family moved to Houston, Texas, so my parents could pursue higher education and better career opportunities. It was a major adjustment—new city, new friends, and a completely different way of life. Although I missed the country lifestyle I grew up with, I embraced the change and began building a new future.

Originally, culinary school wasn’t my first plan. I wanted to start making money and building my own path rather than spending years in school. But I eventually realized that formal culinary training would help me turn my vision into reality. I attended culinary school, where I refined my skills and developed the foundation for the career I had always imagined.

From the beginning, my goal was never just to become a chef. I envisioned opening businesses around the world, consulting for restaurants, and helping other entrepreneurs bring their culinary dreams to life. Over the past 20 years, I’ve built a career not only as a professionally trained chef but also as a menu and recipe developer, creating original recipes and concepts for clients around the world. Today, my passion extends beyond cooking—it’s about creating memorable dining experiences, building successful brands, and inspiring others to pursue their own vision.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
My culinary journey has been anything but smooth—but then again, very few worthwhile journeys are. That’s part of the human experience.

It started in culinary school, where many of us were sold the dream of becoming the next famous chef. The reality after graduation was very different. You don’t walk into a kitchen as an executive chef. You start at the bottom—peeling potatoes, chopping vegetables, cleaning stations, and proving yourself every single day. Many professional kitchens, especially those rooted in traditional European brigade systems, can be demanding environments where you have to earn respect and find your place.

Coming from Louisiana, my foundation wasn’t built in those kitchens. It was built around open-fire cooking, Southern traditions, and an instinctive understanding of flavor. Creating dishes and developing recipes came naturally to me. I realized that my greatest strength wasn’t simply following recipes—it was creating them.

That realization led me toward private chef work while continuing to work in traditional kitchens. As my private clientele grew, so did my income, my confidence, and my client retention. I discovered that people weren’t just hiring me to cook; they were hiring me because they trusted my creativity and my ability to deliver unforgettable dining experiences.

There were plenty of moments when I questioned everything. I thought about changing careers, taking a different path, or giving up altogether. Entrepreneurship and the culinary industry both come with setbacks, uncertainty, and sacrifice. But after dedicating so many years to mastering my craft and building my reputation, I realized there was no turning back.

Today, I understand that success isn’t about becoming the celebrity chef I once imagined. It’s about using my talent to create opportunities—not only for myself, but for others. Whether I’m developing recipes, consulting for restaurants, mentoring aspiring chefs, or building hospitality concepts around the world, my mission remains the same: to use food as a way to inspire, connect, and help others bring their own dreams to life.

Appreciate you sharing that. What should we know about EPICUREAN CUISINE ?
At the heart of my business is one simple mission: to create unforgettable experiences through food. I own a private chef and catering company based in Houston, Texas, where my professional career began. Over the years, my business has expanded beyond catering into recipe development, menu consulting, hospitality concepts, and restaurant ventures.

My specialty is Gulf Coast cuisine. Being born and raised in Louisiana gave me a deep appreciation for Cajun and Creole cooking, and I’ve spent years studying the flavors and traditions that stretch from Louisiana all along the Gulf Coast. At the same time, I’ve become a true student of food and culture. As a traveling chef, I’ve had the opportunity to learn techniques and cuisines from different regions, and today I’m confident in my ability to prepare just about anything my clients envision.

What truly sets me apart is that every event is completely personalized. My clients work directly with me to design a menu that reflects their tastes, their story, and the occasion they’re celebrating. Whether it’s an intimate dinner, a luxury private event, or a large celebration, I believe every guest deserves an experience that feels one of a kind.

Beyond my culinary skills, I think people remember me for my personality. I love entertaining while I cook, making people laugh, telling stories, and creating an atmosphere where everyone feels comfortable. Food should bring people together, and some of my favorite moments are hearing guests laugh around the table while enjoying something I’ve created. It’s genuine—that’s just who I am.

If there’s one thing I’m most proud of, it’s my reputation for bold, unforgettable flavor. I’ve spent more than 20 years developing recipes, refining techniques, and chasing perfection. When someone tastes my food, I don’t want them to simply think it’s “good.” I want them to remember it long after the meal is over. I believe generous portions are part of hospitality, too. My guests often leave with leftovers because I want the experience to continue the next day, not end when the plates are cleared.

I’m also excited about the next chapter of my career. I recently opened a café and bar in the Dominican Republic, where we’re serving specialty American-style breakfasts, premium coffee, authentic Mexican street tacos, handcrafted cocktails, and original dishes I’ve created myself. It’s a reflection of both my Southern roots and my passion for introducing new flavors to people around the world.

Looking ahead, I’m finally stepping into the spotlight in ways I should have years ago. I’m entering culinary competitions, pursuing television opportunities, and developing concepts that allow more people to experience my food and my story. I’m also available for private chef services throughout Houston and regularly travel to New York to serve returning clients. In addition, I ship my signature gourmet cheesecakes nationwide.

If there’s one thing I’d like readers to remember, it’s this: when you invite me into your home or your event, you’re getting much more than a meal. You’re getting Louisiana culture, Southern hospitality, bold flavors, genuine laughter, and a chef who truly loves what he does. I believe God gave me a gift, and every plate I serve is my way of sharing that gift with the world.
