Fauchetta, we appreciate you taking the time to share your story with us today. Where does your story begin?
Mama Joyce Eatery began with a dream rooted in love, Sunday dinners, and the wisdom passed down from one generation of strong Southern women to the next. I grew up in kitchens filled with laughter, cast iron skillets, and the scent of collard greens, cornbread and the best fried chicken. Our mission is to bring that same warmth and comfort to every plate served. With inspiration from my grandmother’s table, my mother’s soulful cooking, and my Dad slow smoked meats…perfection! In May 2020 GOD placed in my heart that I would start a food business. What started as a leap of faith became a culinary haven where people from all walks of life gather to share stories and savor bold, made-from-scratch meals from Mama Joyce Eatery.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
I worked as an HR Professional for over 25 years. I was laid off from my job after over 10 years of service in 2025. Starting a business is not for the faint of heart. Being a black woman who bbq is also considered a diamond in the rough. A lot of times people automatically assume Bruce (my husband) is the one who smokes the meat and I cook the sides. I do both. When we go to speak to people about possibly doing business, my husband has to take the lead because in this day in time there are some people who still believe women should be seen and not heard. We are a 2-person team with a great support system of our family and friends. We have encountered a lot of setbacks, (trying to get funding, finding a mentor to teach us the in’s & out’s of starting a food truck business, etc) BUT GOD always sends who & what we need. I have learned that everyone does not want to see you win and that is okay. GOD has given me this gift and daily I make it my business to be a good steward. I believe our lessons learned are to help the next person journey to be a little easier.

Every meal is a message. We are more than a food truck, we’re a rolling celebration of culture, community, and comfort. Our commitment remains the same as we grow: cook from the soul, serve with intention, and make everyone feel like family.

Our pit delivers some of the best smoked ribs and wings in Houston, seasoned to perfection and smoked low and slow for a rich, unforgettable taste. Every bite reflects our commitment to quality and authentic Southern cooking.

At Mama Joyce Eatery, we believe every guest should leave satisfied—not still hungry. That belief comes from my childhood, where I watched my mother and her sisters carry on the cherished tradition of Sunday dinner. Family, friends, and neighbors were always welcomed. Everyone was invited to enjoy a plate, and they left with another plate to take home.
Those memories shaped the way I serve people today. I believe in preparing quality food that tastes “Oh So Good,” serving generous portions, and giving every customer a meal that’s worth every dollar they spend. For us, it’s not just about feeding people—it’s about sharing love, hospitality, and the comfort of a home-cooked meal, just like we did around our family table.
What sort of changes are you expecting over the next 5-10 years?
I see the food truck business continuing to thrive because everyone is able to brand their own flare for food & culture. Houston is a melting pot of cultural representation that speaks to the soul of everyone that lives here. We meet people who travel from all over the world to come to Houston just to eat. There is no place like Houston.
