Hidden Gems: Meet Kevin Koo of BORI

Today we’d like to introduce you to Kevin Koo.

Hi Kevin, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
I was born and raised in Houston and later attended Rutgers University for college. After working in a family friend’s real estate management and development business, my parents gave me the incredible opportunity to open my own restaurant. To make sure we brought something unique to the table, I traveled to New York City, Los Angeles, and Korea for research and development, exploring ways to elevate the Korean BBQ experience.

In 2019, I launched the first BORI Korean Steakhouse in the Spring Branch area, and it quickly gained traction. However, when COVID hit, we faced some tough challenges. Thanks to the unwavering support of our community, we managed to weather the storm and ultimately turned the restaurant into a success.

Encouraged by that success, my parents and I decided to open a second location closer to downtown. We chose Montrose as our new home, and in April 2024, we proudly opened our doors. Since then, we’ve been serving premium Korean BBQ to Houstonians inside the loop.

What I love most about being in the restaurant industry is the opportunity to meet new people, build lasting friendships, and be part of their special moments. There’s nothing quite like seeing our guests leave with a smile on their face.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
One of the biggest challenges was undoubtedly COVID. I was completely uncertain about how to navigate such a global crisis. Another major hurdle was my lack of experience in the restaurant industry. My background is in finance, and I had never worked a day in a restaurant before. Fortunately, I was surrounded by a strong support network of friends and family who offered invaluable guidance and helped me find my way.

As you know, we’re big fans of BORI. For our readers who might not be as familiar what can you tell them about the brand?
BORI is a brand that takes pride in showcasing the rich traditions of Korean cuisine. We’re dedicated to offering the highest quality ingredients and authentic recipes. From our savory seafood pancake to our bold spicy salad, comforting galbitang soup, and perfectly marinated short ribs, every dish is crafted to delight the taste buds.

But at BORI, it’s not just about great food—it’s about exceptional service. While traditional Korean BBQ often requires you to cook the meat yourself, we take it a step further. Our trained servers expertly prepare and cook the BBQ right at your table, ensuring every piece is perfectly done to your liking.

The atmosphere is a blend of traditional and contemporary design, creating an experience that transports you straight to South Korea, all while you savor every bite in style.

Is there any advice you’d like to share with our readers who might just be starting out?
I believe the most important aspect of starting a restaurant is knowing how to manage people and create an environment where everyone works together toward a common goal. For me, my staff feels like a second family, and I make an effort to understand their perspectives.

One thing that stands out about the restaurant industry is the lack of time to celebrate with other friends and family. With schedules that often don’t align with a typical 9-to-5, you quickly realize how essential it is to truly enjoy the company of the people you work with.
