Today we’d like to introduce you to Pernille Reck

Hi PERNILLE , please kick things off for us with an introduction to yourself and your story.
When I was 15 years old I got a job at our local Italian restaurant in the small town I was living in Denmark . I loved that job , I moved on to different restaurant and job. Years later I open a small catering business in south east Asia when we where living there withy Husbond job. I catered mostly for Western families. When we relocated to Houston , Tx in 2017 I really wanted to open a business here , but it took some years before I had the courage to do so. After covid my husband and I took over an old Mexican pizza place and transformed it into a stylish restaurant with a European twist. We was were aware that this was and still is a difficult task here in Katy , Tx. but we still belive that wholesome food made from scratch is important for an healthy lifestyle , we are trying to give that to the Texans with a European flair to it. We have a Bakery where we bake all our bread and our cakes. We produce. wholesome food from scratch for our customers. We welcome diversity in our restaurant and supporting our community. we have small event like local artist, Single parties, Local art classes and will start with cooking and baking classes soon. Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Definitely not Smoot. Very hard to figure out how to start , what permit and contractors and also landlord . I was blond and blind for the process of commercial renting , where the tenent have to totally pay for everything that is wrong, broken or not up to =code .If I knew what I know today , I would never rent a commercial place , Also some contractorts take advance of a woman . ohh long story short … hard start
Then there is supply chain problem , staff issue . learning cooks to cooks from scratch …

We’ve been impressed with Copenhagen European kitchen & Bakery , but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Copenhagen is my love child, This is where I put my heart and sould into. Copenhagen is where I do me , I cook and bake with my heart . I am a firm believer that processes food is course to all lot off our health problems . That why we at Copenhagen make all our food from scratch . We are a restaurant but also a place for our community to grow , we support and host local art group, local artist, small weddings , birthday , private parties. am arrange getting singles, and seniors together .
