Hi Tracy, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Tracy and Kevin, a dynamic brother-and-sister duo, launched their food truck with a clear and ambitious goal: to transition into a full brick-and-mortar restaurant to serve the community. Their move to Texas from Chicago was a fresh start.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Faced with navigating a new city, being scammed several times by contractors, health problems along the way, and high turnover.

Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
Perfectly seasoned food, like the collard greens with smoked turkey, macaroni and cheese, and crispy whole fried wings, suggesting they’ve mastered the authentic, high-quality soul food experience.

Are there any important lessons you’ve learned that you can share with us?
Soul food is comforting and personal, the service must be warm and welcoming. An unfriendly or disorganized front-of-house can ruin a perfect plate of food. We have successfully learned how to identify and maintain customer satisfaction, turning those insights into sustained service excellence. Employees are more likely to stay when they feel their job offers a future, not just a paycheck.
