Today we’d like to introduce you to Adam Shock.
Hi Adam, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
Pam and I met in Hot Springs, AR while working in the same country club. I was in the kitchen, she was on the other side of the pass. At first she was the bossy server 😉, but she invited some coworkers over to her house for a holiday dinner.
We got to know each other, and she could cook. We discovered we were both from Houston. CrAzY. I found out we both grew up with food being a commonality in our families.
5ish years later, back in The Woodlands, her brother, Steve (who has been smoking meat since forever), wanted to start a food truck.
We decided to go at it as a trio.
My culinary background.

Steve’s BBQ talent.
We’ve been at it for 3 years coming.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Smooth as Emanuel St in Houston!
Trying to balance building a customer base to support us on Rayford, while having to book events to pay the bills has been a big obstacle.
It’s always something with a food truck. Too hot, too cold, broken hub, too rainy, no advertising, trusting the wrong people to advertise for you, constant spam calls (thanks google), everyone loves the food, but not many leave reviews. Oh and 1 bad review can take forever to recover from.
It’s small business as usual.
Ups and downs… just have to love it enough to keep going, and keep doing the right things. It also only takes 1 good review from the right person.

We want it to feel like home.
Whether we come to your birthday party or wedding.. or you come visit us on Rayford, we want you to feel good natured southern hospitality.
We have your standard Texas BBQ spread (we don’t sauce our meat), and we have mixed in some food truck flair.
Everything is made in house except for the fries and bread (Cuban Sandwich excluded).
You gotta try the Deep-Fried Brisket Burrito!

Our families, loyal customers, and customers who actually tell us their honest opinion.
We are able to grow and adjust our business based on input from others.
We know we don’t do everything right.. but we sure try everyday to make it better.
