Life, Values & Legacy: Our Chat with Mia Bailey of Skyline District

Mia Bailey shared their story and experiences with us recently and you can find our conversation below.

Hi Mia, thank you for taking the time to reflect back on your journey with us. I think our readers are in for a real treat. There is so much we can all learn from each other and so thank you again for opening up with us. Let’s get into it: What’s more important to you—intelligence, energy, or integrity?
Energy and integrity are both very important to me.

I believe in surrounding myself with positive energy and creating spaces that reflect that light.
Integrity is at the heart of everything I do — in business, in service, and in every interaction. I value authenticity, respect, and uplifting connections that inspire growth and good vibes all around.

Can you briefly introduce yourself and share what makes you or your brand unique?
Mia Bailey, Owner of Honey Drizzle Houston and Founder of Savory & Seasoned – two brands built on flavor, culture, and community.

What started as a passion for soulful cooking and hospitality has grown into a movement centered around delivering unforgettable dining experiences and giving back through food. Whether we’re hosting a jazz brunch, feeding the community, or preparing personalized meals through our private chef services, our mission is simple: to nourish people — body, soul, and spirit.

What makes our brand special? Every dish is made with care, every event curated with intention. From spiked lemonade on Fish Frydays to wellness-based meal prep for seniors, we’re redefining what hospitality means, one plate at a time.

Right now, we’re expanding our offerings, collaborating with creatives, and exploring experiences that connect people through food. I’m excited for what’s ahead, and I’m grateful for every opportunity to serve with purpose.

Great, so let’s dive into your journey a bit more. Who were you before the world told you who you had to be?
Before the world told me who I had to be, I was a creator, a nurturer, and a visionary.
I was someone who found joy in simple things — nature, feeding people, connecting souls, and dreaming without limits. I was curious, bold, and unafraid to lead with heart. I moved with purpose even before I had language for it.

The world tried to shape me into someone smaller, quieter, more “practical.” But the truth is, I’ve always been someone who sees potential in every moment, beauty and healing in most experiences. That’s who I’ve always been — and who I choose to return to. I guess you could say that I’m a rebel. I refuse to let anyone define, label, or limit me

Was there ever a time you almost gave up?
Yes, there were many times when I wanted to give up. Every being has limits. I’ve felt that I’d reached mine many times throughout life. When I feel defeated, I retreat, meditate, regain my power, and rise like phoenix stronger, wiser, more powerful, and determined

Next, maybe we can discuss some of your foundational philosophies and views? What would your closest friends say really matters to you?
My closest friends would tell you that my peace means everything to me.

I protect it, prioritize it, and make decisions that align with it. Whether it’s in my personal life or in business, I’ve learned that peace isn’t just a feeling — it’s a boundary, a lifestyle, and a non-negotiable. It keeps me grounded, focused, and able to pour into others from a full cup.

Thank you so much for all of your openness so far. Maybe we can close with a future oriented question. Could you give everything your best, even if no one ever praised you for it?
Absolutely. I believe in giving my best not for applause, but because it reflects who I am.

Excellence, to me, isn’t about being seen — it’s about showing up with purpose, pride, and integrity, even when no one’s watching. Praise is nice, but it’s not the fuel. I pour into my work, my people, and my purpose because it matters — because I matter. That’s the kind of legacy I want to leave behind.

There have been moments this past year — even today — when I’ve questioned whether Honey Drizzle Houston will weather the storm.

But even in the doubt, I rise. I get up every day and will myself to keep going — not just for the business, but for the vision, the people we serve, and the purpose behind it all.

Faith, resilience, and grit carry me forward. Some days it’s heavy. Some days it’s hopeful. But every day, I choose to show up and make it happen.
