Hi Dylan, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
From the Gulf Coast of Louisiana to the heart of Seabrook, Texas, my journey has been anything but ordinary. As a Coast Guard veteran, I carried the discipline, grit, and determination I learned in service into a very different kind of mission: crafting the perfect scoop of ice cream and putting smiles on people’s faces.
Space City Cow Handcrafted Ice Cream & Sweet Treats began as a simple dream—to create desserts that spark joy, nostalgia, and a little indulgence. What sets us apart isn’t just the creamy, rich flavors or our over-the-top loaded cookies; it’s the care and craftsmanship we pour into every batch. From scratch, every week, right in our shop, my longtime team and I craft each treat as if it were a work of art.
More than a dessert shop, Space City Cow has become a community hub where locals and travelers gather for more than sweets—they come for the experience, the stories, and the love that goes into every bite. What started as a beloved coastal ice cream shop has now expanded throughout the Houston metro area, offering ice cream catering for corporate, private, and family events. We’ve had the honor of collaborating with renowned restaurants like Pappas Restaurants, Parlor Doughnuts, and Aokicho AYCE Sushi. We’ve also partnered with Blackline Coffee & Donuts and are proud to serve our first Houston high-rise at Amegy Bank Headquarters by the Galleria and soon in their downtown tower as well!
My journey is proof that passion, persistence, and a touch of daring can turn a dream into a place where everyone leaves a little happier… and a little sweeter.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Ah, the story of Space City Cow hasn’t exactly been all sprinkles and waffle cones—there’s been a fair share of bumps along the way. Some of the major challenges I have faced are: Supply & Production Challenges – Making all your ice cream and treats from scratch weekly is a huge commitment. Ingredient costs, equipment issues, and consistent quality can be a daily uphill battle.
Staffing & Team Growth – Running a small, hands-on operation means relying heavily on a small team. Finding the right people who share your passion, especially with high-demand seasons, isn’t easy.
Customer Expectations & Online Scrutiny – Positive posts are great, but negative comments or misunderstandings online can be stressful and draining.
Scaling vs. Local Charm – Expanding the business or catering events while keeping the “handcrafted” feel is tricky. You want growth without losing authenticity.
Seasonal & Market Pressures – Ice cream shops face highly seasonal demand and competition from big brands. That makes cash flow unpredictable.
Personal Investment & Burnout – You’re pouring your time, energy, and passion into every batch. That’s exhausting, and it can feel like every little hiccup is amplified!
The fact that Space City Cow is still standing—and thriving locally—speaks volumes about my team and I’s dedication. The “smooth road” probably exists more in the dream than in reality, but overcoming those hurdles is what gives the brand its character and loyal following. It has made me all around a more mature and generous person!
Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
From a young age in Louisiana, food wasn’t just a necessity—it was a way of life. Desserts, in particular, were my passion. I was the one in charge of sweet treats at every family gathering, always experimenting, always creating. That passion followed me into the military, where even on deployments, I found myself in the galley helping cooks craft desserts—and often other dishes too. Cooking became my creative outlet, my stress relief, my way of expressing myself. Then, three years ago, everything changed. A major accident left me with a blown knee and a concussion that robbed me of the ability to create. For a time, the flavors, the textures, the joy of making something delicious—it all felt gone. Through relentless rehab and therapy, I found my way back, and the kitchen became my sanctuary. Every scoop, every dessert, is now a testament to resilience and the joy of creation.
At Space City Cow, we’re known for bold, unforgettable flavors. Our Bananas Foster tastes like a stroll down Bourbon Street, while Cookie Butter Craze captures the warm, comforting taste of a Biscoff cookie. But the heart of the business isn’t just the ice cream—it’s the community. Seeing people drive hours—or even across the country—for a scoop, watching their eyes light up, hearing their appreciation, is the real reward.
I’m proud of the team we’ve built, the culture we’ve fostered, and the values that guide us. Our customer service is second to none, and our ratings reflect the care and dedication we put into every interaction. For me, it all comes full circle: the flavors I create, the people who enjoy them, and the joy of sharing a little bit of happiness—one scoop at a time!
Where do you see things going in the next 5-10 years?
Trying to predict the future of business right now feels a bit like trying to hit a moving target. With the rapid evolution of AI, social media, and digital marketing, the landscape shifts almost daily. Attention spans are shorter, competition is louder, and the rules of engagement are constantly being rewritten. But in the middle of all that noise, we’ve found something steady: authenticity.
We operate in a niche where originality and quality aren’t optional — they’re everything. You can have the best marketing strategy in the world, but if the product doesn’t deliver, customers won’t come back. That’s why we’ve built our brand on craftsmanship first. We still rely on old-school techniques in how we create our ice cream, focusing on process, detail, and consistency. Technology helps us grow smarter and more efficient, but it will never replace the hands-on passion behind what we do.
My journey into this business is rooted in both experience and perspective. With over 15 years in leadership, customer service, and public speaking — along with a Master’s degree in Business Management — I’ve learned that success isn’t just about having a good idea. It’s about execution, relationships, and the ability to evolve. I’m constantly refining my marketing and networking skills, especially in the digital space. Social media has become one of the most powerful tools we have to connect with people, and staying ahead of that curve is essential.
But at its core, my love for this industry is simple.
I’ve traveled to over ten different countries, and no matter where I was in the world, there was one thing I made sure to experience every time: ice cream. Different languages, different cultures, different traditions — yet ice cream was always there. It’s universal. It’s nostalgic. It brings people together.
Trends will change. Technology will advance. Marketing strategies will evolve. But some things are timeless.
Ice cream is one of them.
