Today we’d like to introduce you to Léne Baggett.

Hi Léne, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
I’ve always loved baking & decorating. I dabbled a little bit in my earlier adult days in Austin (under The Cupcake Social Club name) but never really concentrated on it as a whole, just a hobby. Fast forward to March 2020, I was 6 months pregnant and we all know the fate of that month and year. As the world shut down, I was in fear of losing my full time job. In my anxiety ridden free time, I started baking for neighbors & family. Eventually, via Facebook neighborhood pages, neighbors started telling neighbors about my goods, and LSB Baking Creations was born. I, along with my teenage daughter, posted up at the Saturday Wakefield farmers market with Chef Mickey & showcased cupcakes, drop cookies, cereal bars, & brownies. This allowed our neighbors to come out & buy small pieces of goodies to try, & they almost always came back, or would eventually request a custom order. I even created a custom pick up box, so that we could stay socially distanced during the high times of Covid while still allowing my wonderful neighbors to get custom designed orders for their special celebrations! I usually waved hello and pointed the neighbor in the way of the special cooler.
So come June, I had a beautiful baby boy, and still managed to keep my full time position with my company. With some maternity leave, it was back to work for me, and transitioning into being back in the work force post Covid was a change. All the time, the caking is still kicking! There had been no sign of it slowing down! I kept going, because I absolutely enjoy this work at my core. It really helps get my artistic side out. Fast forward to well, now, and here I am. I am still in my full time position, and still going strong with LSB Baking Creations. We have 3 kids, a college student, and a 6 & 4 year old. Some weeks are very difficult to balance. 40 hours with my day job, kids with extra curricular activities, a husband with travels part time for work, then up to 12 custom orders in a 3-4 day period. But I make it work. I am the sole kitchen chef, cleaner, & dishwasher, but I couldn’t do it without the support of my husband, our family, and our wonderful neighbors who keep me in business! It is only through their word of mouth that I’ve gotten the work I have, and I am so appreciative of all of it!

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Absolutely! The juggle of full time work, a family, and LSB Baking Creations is a balancing act at best. A calendar is an absolute necessity and even then, it’s not always perfect. I have mixed up dates for orders and have so much sadness when I mess up a clients special day.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
Custom cakes, cupcakes, cookie cakes & other treats. I don’t work with a lot of fondant, mostly American buttercream. I specialize in using many Texas based ingredients including local Acres Homes eggs, Deluxe Vanilla from right here in Houston, Pioneer Flour (San Antonio) & Falfurrias Butter (Falfurrias). My clients constantly rave on my buttercream flavor being airy & flavorful while not being overly sweet, I owe this completely to my butter selection. As for design, I use mostly buttercream to draw with, including writing & drawing using a projector for guidance.

Have you learned any interesting or important lessons due to the Covid-19 Crisis?
That food is such an important part of any celebration! During the crisis, no bakeries or groceries were accepting custom orders, so this is where I was able to step in and help our community with their needs.
