Today we’d like to introduce you to Brittney Aplin.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
My dad, Brad Aplin, founded a seafood restaurant in Houston in 1996. I worked with him for 20 years. I began with serving tables & went on to be the general manager in 2010, & the regional manager of his three restaurants at the time of his passing in 2017. Now I’ve opened my own store in his honor and I named it after him. Capt. Brad’s Coastal Kitchen opened in January of 2019 with 31 of his former staff members, including his chef of 14 years.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It was not an easy road to travel & came along with many nights of lost sleep and unexpected hiccups. Even nine months in, I still run into bumps, but that goes with being a business owner. We did a full build-out & that was a first for me. Finances went way over budget. The opening date was pushed back more times than I can count. Training for a new menu & computer system was not an easy task, but we got it done.
Please tell us about Capt. Brad’s Coastal Kitchen.
We take great pride in our store and our menu. This crew is a family, many of us have worked together for over a decade. We appreciate our guests and want them to enjoy their food, drinks, & experience when they choose to step through our doors. We have a wide range of seafood (shrimp, redfish, stone crab, snow crab, crawfish, oysters, softshell crabs). We also have an oyster station where you can see our shucker open the oysters and chargrill them too. I’m proud of everything we have gone through as a team and the genuine care this team shares in the overall experience we create for the diner.
Do you look back particularly fondly on any memories from childhood?
All my favorite memories have my dad in them. I feel very blessed to have been able to watch him learn this industry. He was brilliant and the hardworking and genuine. He got to the bottom of the issues & paved the way for us to learn the hospitality industry.
