Meet Carl Eaves of Liberty Kitchen

Today we’d like to introduce you to Carl Eaves.

Thanks for sharing your story with us Carl. So, let’s start at the beginning and we can move on from there.
My brother and I would forage and collect things as young boys, maybe it’s genetic, our father was an avid collector of oddities. Being from Northern England, I grew up with the tradition of apprenticeships. I had a three-year painting and decorating apprenticeship that gave me a great set of skills. I moved to London with the hopes of starting a band and ended up working on the design side of music video sets. That was a great time, and I learned a lot. I think that may have started my sense of making a place that gives you an experience.

After London, I moved to Los Angeles. In Los Angeles, I started a business with a partner where we designed, painted and decorated residential and commercial properties. That was the ‘80’s where specialty paint finishes and trompe l’oeil were really big. At that time it was a new craft in the US. We did really interesting projects.

Ready for a change, I moved to Houston to open a restaurant with a friend. The restaurant and pub business has always had a draw for me. It took us just over a year of really hard work, we did most everything ourselves and with the help of good friends. In 1995, Claire Smith and I opened the Daily Review Café with a wonderful welcome from the Houston community. That was the start of a nice long run in the restaurant business. With another partner, I went on to open the Social in Washington which ended up forming what is now F.E.E.D. TX. With F.E.E.D. Will Davis, Lance Fegan and I have melded our tastes in food, design, atmosphere, and hospitality.

Has it been a smooth road?
There are always bumps in the road and difficult things that pop up. It’s generally related to lack of time and/or money. It just makes you think and work a little harder. Honestly, ultimately everything works out as it should.

So let’s switch gears a bit and go into the Liberty Kitchen story. Tell us more about the business.
I am one of the founding partners of F.E.E.D. TX. restaurant group. We have four restaurants that specialize in modern comfort food with Gulf Coast influences – Liberty Kitchen and Oyster Bar in the Heights, Liberty Kitchen Oysterette in the River Oaks/Galleria neighborhoods and our newest place Liberty Kitchen Treehouse in Memorial City. I am the Creative and Development Director, so along with the smaller details, I create the design concept and oversee the construction process for all of our restaurants. We decided long ago that we wanted each location to be different from the last, so I design each location to reflect the neighborhood it’s in.

I think I am most known for finding odd and unrelated pieces of salvage equipment and materials and re-purposing them in our restaurants to create a quirky, comfortable, inviting place. And, for color, I like color and like to use it everywhere possible.

As a company I am most proud of our desire to forever grow in our approach to how to do things better and how to help. Whether that’s for our guests, our employees, our community or our partnership.

Pricing:

  • Happy Hour takes place Monday – Friday from 3:00-6:00 p.m. and on Sundays from 5:00 – 9:00 p.m. at all four restaurants
