Meet Ellyn Rose Benigay of The Boba Cart HTX

Today we’d like to introduce you to Ellyn Rose Benigay

Hi Ellyn Rose , so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
Tea has always been a big part of my life. Growing up, I spent countless weekends at tea houses, gathering with friends, sharing stories, and creating memories over our favorite drinks. There was something special about those moments.

I wanted to bring that same experience to others but in a way that could travel anywhere. That’s how my boba cart business was born—a mobile way to share my love of tea and boba with people at their most special moments. My husband and I started by setting up at different markets in Houston, introducing our drinks to the community and meeting some amazing people along the way. Seeing people light up after their first sip and hearing their stories about their own love for boba made me even more passionate about what I do.

Whether it’s a wedding, birthday, corporate event, or casual gathering, I believe that great drinks bring people together. Our goal is to create more than just delicious boba—I want to help make every event feel personal, joyful, and memorable. With every cup we serve, I hope to spread the same love for tea that inspired me from the very beginning.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Starting a mobile boba business has been an exciting journey, but it definitely hasn’t been a smooth road. Unlike a traditional shop, running a mobile setup comes with its own unique set of challenges. From the very beginning, we’ve had to figure out how to create an efficient workflow in such a limited space—how to make drinks quickly while keeping everything organized and accessible. Packing was another learning curve. Every event requires careful planning to ensure we bring just the right amount of supplies without overpacking or running out of key ingredients.

Finding the right markets to sell at was another challenge. Not every event is a good fit, and it took time to figure out which places had the right crowd for our drinks. Even after setting up at a market, things don’t always go as planned—whether it’s unexpected weather, equipment malfunctions, or supply shortages. Without the stability of a brick-and-mortar shop, we’ve had to learn how to think on our feet, troubleshoot quickly, and adapt to whatever comes our way.

Despite these challenges, I wouldn’t trade this journey for anything. Every obstacle has taught me something new and pushed me to grow. At the end of the day, seeing people enjoy our drinks and knowing we’ve created something special makes it all worth it.

Alright, so let’s switch gears a bit and talk business. What should we know?
