Today we’d like to introduce you to Jorge Loredo.
Hi Jorge, so excited to have you with us today. What can you tell us about your story?
Started in 2019, at the time Micheladas where just becoming popular in other parts of town, I saw the opportunity in the southwest area so I consulted with my siter Norma (the chef) we came up with our own version of a michelada bar and opened in October 2019. At the beginning of our Journey the micheladas where our main attraction, we did have a small food menu, overtime the food became really popular and our small menu got larger. Now, La Cruderia known for the food more than the micheladas. La Cruderia is a Mexican regional kitchen. Our menu includes dishes from many parts of Mexico so
guests can enjoy different flavors that represent our culture. “La Cruderia” comes from the Spanish word “crudo,” meaning raw, because many of our most popular dishes are served fresh and raw, like ceviches and aguachiles. Some people also use “crudo” to mean hungover. Even though this is not the meaning of our name, our authentic Mexican micheladas, cocktails, aguachiles, and menudo are favorites for this reason. My sister and Chef, Norma was born and raised in Mexico just as I was. She learned to cook through family traditions, developed a passion for Mexican gastronomy, and traveled through many parts of Mexico tasting regional dishes. Thanks to her experience, our food is authentic, homemade, and full of culture. Our mission is to bring authentic Mexican dishes that remind us of our moms’ or aunts’ kitchens—warm, comforting,traditional, and full of flavor.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Definitely hasn’t been a smooth road, COVID hit 4 months after we opened, so it was a struggle for almost and entire year. Our second location in Spring Branch has also been a challenge as it was a big change in the demographics. Overall we’re been able to adapt and slowly keep growing the business.
As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I come from a corporate job, I’ve always been very operational and well structured in my professional job. My sister on the other hand, she has worked in the service industry for many years so she’s more in the creative realm. I believe that is why we complement each other so well, she takes care of creating the art and I make sure we’re running the business properly.
Before we let you go, we’ve got to ask if you have any advice for those who are just starting out?
I would tell them to follow their passion, right or wrong they will come out a better individual. I wish I knew how difficult this industry is, working with a mentor would’ve saved me much headache and time.
