Meet Kenneth and Geri Wadsworth of Chasin’ Tails Cajun Cuisine in Clear Lake

Today we’d like to introduce you to Kenneth and Geri Wadsworth.

Thanks for sharing your story with us Kenneth and Geri. So, let’s start at the beginning and we can move on from there.
At the age of 17, I began to work for a very large corporation. My wife and I met in high school and married at the age of 21 , at 27 we had two children. We moved about the country with the company so that I could move up the ranks. I grew with a company that I believed in and supported and with many years of dedication, hard work and passion I became an executive manager. In 2014 the company I dedicated 34 years to decided to have a clearance on 50 plus year old managers with tenure and top salary. Thank goodness that I maintained an entrepreneurial spirit that I flourished with the help of my wife while working. While working my 34 years with the corporation we had began working on many endeavors in order for my wife to stay home with our children. We embarked upon many thing from upholstering boats, mfg. sports bags, sharpening hockey and figure skates, fix and flips, building custom homes and saving a restaurant/country club near Vail, Colorado that gave us much experience and knowledge to grow Chasin’ Tails.

In 2014 we had a vision of a Cajun food restaurant using my grandmother’s amazing recipes I so appreciated throughout my whole life. My wife and I traveled to Louisiana to spend time with my Aunt who flourished my grandmother’s 100 year old recipes.

Geri and I take pride in creating a concept that we were told was not possible, a concept of homemade food, not processed food reinvented! We have developed many recipes from my grandmother, my aunt, my mother-in-law and my wife. We take such pride in that and we did what we were told was not possible, We literally burn the rue for our gumbos and ettoufee in our kitchen,

We created by hand, ourselves, a Bourbon Street feel, with balconies, street poles and yes Cajun music! Our menu is fun and very eclectic … from Cajun to Italian, to fresh burgers made daily, to an amazing Monte Cristo Sandwich that really doesn’t exist anymore. We have fried twinkies, fried PB&J, fried bread pudding, and fried pecan pie.

If you don’t want Cajun but your significant other do we have a barrage of different food that will please every palate. We really have a passion for Chasin’ Tails and strive everyday to grow it and perfect our food, but you will still find Geri and I plumbing, laying tile, painting, landscaping etc. as we still design and build custom homes. We are very proud of Chasin’ Tails and hope you come enjoy a restaurant with true home cooked fresh food!

Chasin’ Tails has 24 beer taps and 5 New Orleans Style daiquiri machines using only Fat Tuesday mixes and recipes.

Has it been a smooth road?
No, It has not been a smooth road, during the first year it is a struggle to get the recipes perfected and train the cooks to make the food consistent. In this industry there is also a lot of turnover until you find the right employees that care about the business as much as you do. We now have a great staff in place both in the kitchen and the front of the house. Our customers really appreciate our good service and food.

So, as you know, we’re impressed with Chasin’ Tails Cajun Cuisine – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
Again, we continually strive to improve our food and service, we listen to our customers.

What sets us apart is that we do make our food from scratch. We do not purchase prepared foods from vendors. Our food is fresh and prepared in house daily! Geri and I also make regular trips to Louisiana to purchase our custom blended smoke house sausage, Cajun pork and boudin including our recently introduced jalapeno pepperjack boudin.

This year we had a great crawfish season many customers expressed best they ever had and the best in town.

We focus on value, our prices are very reasonable and portion sizes are big. Happy hour is held every day from 4-7pm offering great prices on food and drinks.

You can also find our everyday specials for under $10.

We focus on made in Texas items such as: Dash and Titos Vodka plus 12 taps of handcrafted Texas beers.

Let’s touch on your thoughts about our city – what do you like the most and least?
Who doesn’t love the Lone Star State? The people are great, awesome weather, no state tax, and lots of great food! Least about the City would have to be the traffic on I45.

    We have eaten at the Chasin Tails and it is the very best tasting Cajun food I have ever had in my life. We also love the atmosphere and then throw in those wonderful drinks….. it makes such a wonderful date night.
