Meet Kimberly Wingate of Kas Cake Emporium in Galveston

Today we’d like to introduce you to Kimberly Wingate.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
I am from Galveston, Texas, raised in the little rural town of Hitchcock, Texas, this is where I fell in love with and learned to produce the best food. I come from a small close knit community who grew and fished for everything. I was raised on unpasteurized milk and never became ill! I always had a interest in the arts and food. When I was a teenager, I was a portrait artist at a former Houston amusement park called Astroworld, which was near and paid homage to the Astrodome, (Astroworld no longer exist and the Astrodome closed after Hurricane Katrina).

My formal culinary training was earned from the Culinary Institute of America in Hyde Park, New York. I interned at Adams Mark Hotel resorts in Daytona Beach, FL.

Became a pastry chef for various Walt Disney resorts, longest resort being Grand Floridian, this resort produces the famous wedding cakes for Cinderella weddings.

Established Kas in Wilmington, DE.

A special word about Wilmington, New Castle County in Delaware is the best place for a new start up. The business programs offered here and the cooperative climate are top notch! Most business training is free, most are in Dover. The cost of living is low, no taxes and great for families. Avoid the city of Wilmington, head toward North Wilmington, Newark, Hockessin. Kas will maintain a presence in Delaware. We love this state, it has done a lot for Kas.

Has it been a smooth road?
No, raising capital without selling your soul to a bank. Launching an ethnic cuisine in an isolated area such as all of Delaware (Delawareans hardly leave the state, most have never been outside of it), most of Texas outside of Houston, Dallas, Austin and northern Florida.

So, as you know, we’re impressed with Kas Cake Emporium – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
I consider Kas as a gatekeeper of a lost art form, authentic southern heritage and Caribbean cooking. Kas specialized in the African American cuisine of southeast Texas and Louisiana and that of the Caribbean. We are known for our special desserts, (pineapple coconut cakes, sock it to me cake, fruit fried pies, Puri Dal Roti, Mofongo, large empanadas). Kas is an African American and Puerto Rican owned and operated company, for that alone, we are proud. Kas will be in three states: Delaware, Texas, Florida and three overseas locations. The second half of Kas is Mr. Angel Rivera, who is from Maunabo, Puerto Rico. He has been in the restaurant business for over 23 years and also have a gift and passion for his native cuisine. He brings the best of the Spanish Caribbean to our customers.

Let’s touch on your thoughts about our city – what do you like the most and least?
Galveston need to come from behind Houston and be allowed to come into its own. What I like most about Galveston and the Gulf Coast region as a whole, are the people and the laid back community. Least, hurricanes and politics.
