Meet Laura Biolo of Laly’s Bakery

Today we’d like to introduce you to Laura Biolo.

Hi Laura, please kick things off for us with an introduction to yourself and your story.
I started taking an interest to baking at a very early age and was obsessed with American-style cakes and treats. I was born and raised in Italy and these types of sweets didn’t exist there yet! I would try to replicate American cupcakes and fondant work and share it with my classmates in middle school, then in high school, I started to sell my creations to a few friends and family. When I moved to the States in 2019, I needed a little hobby to keep me busy while I was settling in my new home and during one of my regular baking sessions, I found sugar cookies- and the rest is history! I turned this newfound love for decorating cookies and officially turned it in a full time job soon afterwards. I’ve now been in business for a little over 2 years and couldn’t be happier!

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Going from baker to “cookier” (what cookie decorators are called within the industry) wasn’t the easiest transition! I had a very loyal client based that would order cakes, cupcakes and other small treats when I decided to turn my business into selling cookies only. So I decided to introduce regular “pop-ups” events where I would still offering a variety of sweets, while keeping custom orders related to cookies only. In August 2021, we moved from the Austin area to Houston and needed to re-build a customer base from the ground up! The Houston community has been showing Laly’s Bakery so much love, we are now regularly at farmers markets all over the city and love the new connections we are making!

Alright, so let’s switch gears a bit and talk business. What should we know?
We are the only cookie company in the area offering over 35 different sugar cookie flavors! I’ve always loved playing with flavors and creating new combinations and knew I wanted my cookies to be customizable in all kinds of ways! I also love to teach and currently host in person and online cookie classes, as well as cookie decorating parties for adults and kids!

Is there any advice you’d like to share with our readers who might just be starting out?
For anyone starting out: Know you worth, be patient, keep practicing and get to know your fellow baker community! I stand for the community over competition, my fellow cookiers have been so helpful throughout my journey and lots of friendships blossomed from it!
