Today we’d like to introduce you to Maurizio Montanari.
Maurizio, can you briefly walk us through your story – how you started and how you got to where you are today.
The Montanari family moved to Katy back in 2011 when it was only a small city, and a few years later noticed how fast this city was growing. Due to the rapid growth. We realized the need for food, especially a fresh, authentic Italian place. Being Italian, with the help of my mom, I realized we could bring our neighbors the most authentic Italian flavors they had ever tasted. Therefore, I decided to open a small artisan manufacturer of fresh handmade pastas, sauces and lasagnas. Our product quickly gained notoriety, people enjoyed our food and catered their events with us which was the only service we provided at the time. Recently, as of August of 2016, we opened our first store front/restaurant. Our concept is new, and unique; as costumers get fresh Italian food in a matter of minutes. Essentially, costumers are to build their own pasta bowls or choose from one of our fresh lasagnas. Fresh hand cut pasta and sauces are prepared and cooked right in front of our customers. The idea is to bring our costumers the freshest, healthiest products possible while staying within a “fast-food” time frame. Customers also have the option to purchase our products and take home to cook themselves. We offer all of our pastas by the pound, our pre-cooked lasagnas to bake at home, and all of our sauces jarred up ready to serve.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Frankly, it has been a tough process, but we believe in our product and idea so at the end of the day it is worth the troubles. It has been a constant struggle to make sure our products are always fresh, and that our customers receive the best shape of us possible. We are not a traditional Italian bistro; therefore we are posed with the challenge to educate our customers of our concept, and the long process that goes into making our quality food.
Please tell us about Montanari Pasta Express.
We specialize in bringing our costumers authentic Italian food with no added chemicals that take a toll on our bodies. We gained our popularity through our beef lasagna which remains as our #1 dish. We are proud to say with complete honesty, that we make all of our product from scratch in store with fresh ingredients. We differ from others in that we bring you fresh Italian food, in minutes while you observe the whole process. No other Italian restaurant shows their costumers the process of making fresh pasta, while cooking it in front of their eyes.
Do you look back particularly fondly on any memories from childhood?
Christmas holidays where my whole family got together and prepared traditional Italian dishes by hand.
