Meet Nikita Freeman of The Sweet Shack Xpress in Fresno

Today we’d like to introduce you to Nikita Freeman.

Nikita, can you briefly walk us through your story – how you started and how you got to where you are today.
I started baking at five years old with my grandmother. I remember how passionate she was when we baked, I opened my business in 2009 while working overseas it was previously named Miss B.s Cakery after my daughter who also at a young age was baking.

While overseas, I spent my off days baking for everyone from the janitor to the U.S. Ambassador in Kabul, Afghanistan. Being a disabled Veteran now baking still soothes my soul and puts smiles on customer’s faces. I think I stand out because this is not a job for me I absolutely love doing it and that shines through in my product.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
The road to get here has not been easy. I worked overseas for quite sometime so my daughter filled small orders like cupcakes while I was away. Once I got home and could do my business full time now, I was diagnosed with PTSD. This shattered my world for quite sometime. I stopped baking completely except for taking sweets to the V. A. When I would have my appointments. The smile on their faces warmed my heart and this reminded that I still had purpose.

The Sweet Shack Xpress is a “taste of home”. We specialize in homemade desserts. We provide everything from an old school 7UP to a custom Motorcycle cake, we provide it all. The best part about our desserts is they don’t just look amazing they are actually good!

What were you like growing up?
Growing up, I was a bit of a tomboy, but I loved the kitchen and playing in makeup! I was blessed to have had three grandmothers and they all taught me different things from homemade banana pudding to Homemade yeast rolls. Some of my recipes are literally handwritten.
