Meet Adam Gorelick of Noe’s Crepe Coffee & Tea in The Woodlands

Today we’d like to introduce you to Adam Gorelick.

Adam, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
We met each other about eight years ago while Wanalee was here as an Aupair. Adam has a master’s degree in education and has been a high school teacher for over ten years. Wanalee has a bachelor’s degree in social work from Thammasat University in Thailand and was a social worker before she immigrated to America. Through our love of fresh quality food, we decided to open our own restaurant.

When we were coming up with a name for our restaurant we named it after our Australian Shepard dog Noe. We both did extensive research on our crepes, we traveled all throughout the world to see what people can do with Crepes. We have been to New York, Paris, London, Tokyo, Bangkok and plan to introduce the best elements from all over the world.

Our coffee is locally roasted in Houston and is delivered freshly roasted every other week. We are striving to be the best coffee shop in The Woodlands area. We will have multiple single origin coffees in stock for sale and will offer to do any of them as a pour over. Coffee is a natural product that its flavor is impacted by many factors. The major factors that influence the quality of the coffee we make are:

Farming Practices
Roast Profile
Processing
Blending
Brewing

We pay attention to where our coffee comes from and want to make sure the product we produce is as good as possible. We want to source the best coffee possible to produce the best drinks possible. Whether you order a latte, a house coffee, or one of our single origins for a pour you will be getting a quality product that is at the peak of its freshness, ground seconds before being brewed.

We’re always bombarded by how great it is to pursue your passion, etc. – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
No, the road has not been smooth. Neither one of us have owned our own business before and neither one of us have extensive restaurant experience. One of the biggest obstacles is finding the right people to make the business work. We have been very lucky with the people we have hired because they are all passionate about our product and in line with our vision. Every employee we have truly believes in the product we sell, the quality of our product, and the way we do things at Noe’s.

Our business specializes in specialty coffee, high-quality teas, and delicious crepes and sandwiches. One of the things that set us apart from some of our competitors is the focus we have on doing everything fresh in-house as possible. We have no freezers and everything we sell is as fresh as possible. All of our sauces are made fresh, and it is easy to taste when you have our food.
